I can’t believe it is October already! Fall is in full swing and there is not better way to welcome it then with a recipe using butternut squash and sage–this Roasted Butternut Squash and Sage Mac & Cheese makes a delicious fall dish for the whole family.
Good Morning everyone!
Roasted Butternut Squash and Sage Mac & Cheese
One of my favorite comfort foods is mac & cheese! I have noticed with this pregnancy I have craved mac & cheese a lot! When I saw this recipe in Cooking Light Magazine I knew I had to try it out. The original recipe used bacon and green onions in their mac & cheese along with the butternut squash but I decided to remove those and put sage in instead. I have always been a big fan of the pairing of butternut squash and sage, especially in a pasta dish.
The cheesy, nutty taste of fontina cheese (sometimes fontinella) is a great compliment to the dish. Who doesn’t love a comforting bowl of mac and cheese mixed with sweet butternut squash on a cool, crisp day?

I just told Stephie that I’m all over this recipe once we can get my husband back to eating milk products (long story). I mean–pasta, butternut squash and cheese? Yes, please! So glad that you joined Friends First. I’ve loved finding new blogs to follow.
Thanks for stopping by Julie! I agree–this combination is a good one!
