Roasted Butternut Squash and Sage Mac & Cheese

One of my favorite comfort foods is mac & cheese! I have noticed with this pregnancy I have craved mac & cheese a lot! When I saw this recipe in Cooking Light Magazine I knew I had to try it out. The original recipe used bacon and green onions in their mac & cheese along with the butternut squash but I decided to remove those and put sage in instead.  I have always been a big fan of the pairing of butternut squash and sage, especially in a pasta dish.

The cheesy, nutty taste of fontina cheese (sometimes fontinella) is a great compliment to the dish. Who doesn’t love a comforting bowl of mac and cheese mixed with sweet butternut squash on a cool, crisp day?
