Tomato White Bean Soup
In my house if I make a batch of tomato soup it is all mine. 🙂 My husband isn’t a tomato soup kind of guy. Me on the other hand, I could eat two bowls in one sitting. Especially if grilled cheese is involved!
Tomato White Bean Soup is similar to your traditional tomato soup but with added vegetables, white beans and fresh basil, pureed and topped with grilled cheese croutons. Not only does this soup taste rich and flavorful but there are added health benefits when eating tomato soup. It offers you a good source of vitamin C and A and is an antioxidant. You can feel good eating this soup for more than just the comfort it offers on a cold day.

Speaking of comfort–as I get bigger with pregnancy and a little more uncomfortable I need a bowl of comfort after a long day at work. My two year old has definitely offered good distraction with his constant energy.
When I made this Tomato White Bean Soup I knew I wanted it to have a thicker consistency so I added milk (plus it gives you that added calcium). People across America consume dairy products on a daily basis and my family is no exception. Whether I am adding milk to Baked Mac & Cheese or this Tomato White Bean Soup to thicken it up, or giving my son a glass, it is a staple in my house.
