Wow, I don’t know where to start! Perhaps with those chocolate zucchini muffins (I’m in a baking mood), but the Korean BBQ zoodles are making me want to invest in a spiralizer!
I know! Both of those look great–especially those muffins since my kids go crazy for those.
It is a toss up between zucchini and eggplant when it comes to my love and adoration, but they each have their place (and these zucchini recipes sound fantastic!) Wish I did a vegetable garden this year!
Eggplant is great too! I need to use it more then I do but I did plant it this year in my garden so we will see if I get any.
