I have wanted to start a series on my blog for some time but wasn’t sure what to do. Every time I see my dad he suggests I do more posts featuring superfoods. I love his suggestion and decided to start sharing a series every Saturday that features a round-up or a recipe featuring a superfood.
I hope this series will help give people ideas on how they can incorporate these powerful foods into their diets. Today I am starting the series off with a round-up of 21 Ways to Use Kale {in ways other than salads}. I think a lot of people already use kale in salads, so I wanted to highlight other ways you can cook with kale and add it to dishes you already love.
What makes kale a superfood?
Just one cup of kale can provide more than 100 percent of your daily value for vitamins A and C. Kale is also a great source of vitamin K. All of these vitamins are complemented by a low calorie dosage per serving. AND, kale doesn’t carry any fat! It’s accompanied by a hearty amount of fiber and protein, too {source: Best Food Facts}.

In fact, it’s the one vegetable my oldest son will actually cook…he likes other veggies, but for some reason, left to his own devices, kale is the only one he will cook on his own.
