There is something about the months of February and March. Every year when those months rolls around I get major cabin fever and start counting down the days until warm weather. One thing I struggle with is the motivation to cook up complicated recipes after a long, exhausting day. 15 Minute Turkey Sweet Potato Black Bean Skillet to the rescue!

I know that a lot of you are also looking for easy weeknight meals that you can put on the table for your family.  Today’s 15 Minute Turkey Sweet Potato Black Bean Skillet is just that; simple to make, ready in under 15 minutes and filled with farm flavor.  This meal is great on its own, over brown rice, quinoa or lettuce or as a filling for tacos or quesadillas. One of my favorite things about a recipe like this is how versatile it can be for your family’s needs.  This recipe also makes great leftovers too, so you can use it for salads, or a burrito bowl for lunch.

When Alexia Foods asked me to create a recipe using one of their frozen sides I was excited to incorporate it into an easy weeknight meal.  We really enjoy Alexia products in my house, whether it is the Sweet Potato Fries with Sea Salt or one of the vegetable blends. Today’s 15 Minute Turkey Sweet Potato Black Bean Skillet uses Alexia’s new Southern Sweet Potato Blend.  This blend has sweet potatoes, sweet corn, sweet peas, red bell peppers and onions. They are seasoned really nicely with a pinch of cayenne pepper and seasoned herbs.

      I Had an issue with that recipe. Here are the ingredients: Ingredients

      Meat
      โ€ข 1 lb Ground turkey
      Produce
      โ€ข 1 11 oz package Alexia southern sweet potato blend
      โ€ข 1 14.5 oz can Black beans
      โ€ข 1 Cilantro
      โ€ข 2 Garlic cloves
      โ€ข 1 Green onion
      โ€ข 1/4 Sweet onion
      โ€ข 14 1/2 oz Tomatoes
      Baking & Spices
      โ€ข 1/2 tsp Paprika
      โ€ข 1 Salt and pepper
      Oils & Vinegars
      โ€ข 2 tbsp Olive oil
      Nuts & Seeds
      โ€ข 1 tsp Cumin
      Dairy
      โ€ข 1 cup Cheese

      You will just brown the ground turkey with the spices and add the remaining ingredients and finish sauteeing for about 5 minutes.

    I cant find the Alexia Sweet Potato blend, what is in it? I used tots instead for the first time making this and it was wonderful!

      Oh that is great! This post was a while ago so it is possible they don’t have that blend anymore. It had sweet potatoes, corn, peas, bell pepper, onion, herbs and cayenne pepper in it.
