Cinco de Mayo is almost here and why not celebrate with one of these 15 Mouthwatering Taco Recipes? If you are a taco lover like me, then you are going to love this round-up of everything from fish, to pork, to lobster tacos and more.

I am leaving on a jet plane! Mike and I are heading to Costa Rica on Friday and as you can imagine I am beyond excited.  Not only are we going to spend some quality time, just the two of us, I am going back to a place I love.

When I was in college I spent half of my junior year living and studying in Costa Rica.  I lived with a family that only spoke Spanish and was immersed into their beautiful culture. I fell in love with the country, the people, the beauty that is everywhere, the laid back way of life. I am anxious and excited to go back and see how things have changed in the past…well I won’t say how many years {it makes me feel old}.  When I went to Costa Rica back in college it was a pretty unknown place and now it is a tourist destination, so I know things have changed a lot.  I have been brushing up on my Spanish speaking skills so hopefully it all comes back to me.   I hope to disconnect from all forms of social media so you might have to wait until I am back in the states to see our pictures, but just in case I feel inspired to post some pictures while I am there, you can follow our adventures on Instagram.
