30 Minute Chicken Tortellini Skillet mixes tortellini, vegetables and chicken to create an easy meal full of flavor and nutrition.

30 minute meals are my thing. These type of recipes have become a weekly occurrence in my house.
30 Minute Chicken Tortellini Skillet is a meal that my Mom often makes when we get together and need a quick dinner that can feed a large group.
You can easily double or even triple this recipe and serve a big group and it is very customizable which is also a plus when feeding a lot of mouths.
This recipe came in handy on Tuesday when we got back from Florida and the desire to cook an elaborate meal just wasn’t there.

When we get back from vacation it usually takes me the rest of that week to get back into the swing of things.
I end up running out to the grocery store in a panic because we have no milk and other basics in the house.
Meal planning when we return from vacation usually doesn’t happen until the following week.
This 30 Minute Chicken Tortellini Skillet was just the answer to the post vacation scramble.
The ingredients in this dish are things you can easily pick up at the store and many people keep on hand.
Feel free to add or remove ingredients based on what you have in your pantry and refrigerator.
We like to use cheese tortellini in this dish but feel free to use your favorite flavor.

30 Minute Chicken Tortellini Skillet

Ingredients
- 4 oz. cheese tortellini, cooked
- 2 Tablespoons olive oil
- 1 sweet onion, chopped
- 2 cloves garlic , minced
- 1/4 cup white wine , {I used pinot grigio}
- 2 chicken breasts, chopped
- 1/2 large zucchini, cut in half and then sliced
- 1 red pepper, chopped {or pepper of your choice}
- 1 teaspoon oregano
- Salt and pepper to taste
- parmesan cheese, Freshly grated
- 1 cup walnuts
- parsley, chopped
- Green onions, chopped
Instructions
- Cook the tortellini according to the package. Set aside.
- While the tortellini is cooking heat the olive oil in a large skillet over medium heat and sauté the onion and garlic until soft.
- Add the white wine, chopped chicken, zucchini, red pepper and oregano and simmer until the chicken is cooked through and no longer pink, stirring occasionally.
- Add the tortellini into the chicken mixture and stir. Add the optional garnishes: freshly grated parmesan cheese {you can let the cheese heat for 2 minutes over low if you like it melted}, walnuts, fresh parsley and chopped green onions.
- Serve warm with a side of crusty bread.

One of my favorite parts of this dish is the freshly grated parmesan cheese and walnuts on the finished dish.
If you have a little one in the house with an allergy you can leave the nuts out.
