Frozen Chocolate Coconut Banana Bites are inspired by one of my favorite sweet treats from Trader Joes.
When we moved to Cleveland, Ohio recently there were a few things that I knew I would really miss. Friends. Chicago restaurants. The endless things to do all year round.
One thing I didn’t realize I would miss as much as I do though is Trader Joes.
In Chicago you can find a Trader Joes all over downtown and in almost every suburb.
I had one 10 minutes away from my house there. I was spoiled with so many good grocery stores close to me.
Now that we live in the Cleveland/Akron area the closest Trader Joes is 45 minutes away.
No big deal, right? Wrong! I thought a monthly trip would be enough but it just isn’t cutting it.
We now make a weekly trip to Trader Joes. Yes I am that crazy person that drives 45 minutes.
I know, I know. But hear me out first.
Will has recently decided that he doesn’t need naps.
It is funny how toddlers fight naps because as an adult I wish I had the opportunity to nap on a daily basis. 😉
If you have a toddler you know how crabby they can get without enough sleep.
In comes our weekly trip to Trader Joes, an excuse once a week for Will take a nap in the car.
Before I had kids I never thought that I would base my daily errands and grocery shopping around naps but you gotta do what you gotta do.
Naps are not the only reason I go to Trader Joes.
I love the variety and unique foods they carry. I also know that I can buy organic and not spend an arm and a leg.
Trader Joes carries some things that you can’t find anywhere else and sweets happens to be an area they excel.
Frozen Chocolate Banana Bites anyone?
They are one of the many things I love to buy when we go to Trader Joes.
A few weeks ago when making fondue I looked at the creamy, dark chocolate and guess what came to my mind?
Here we are…I had leftover chocolate from the fondue and started dipping the bananas in and freezing them.
After a little recipe testing I decided that the coconut was a great addition but you can leave that out if you want. I like to make a half a batch with coconut and half without for those that don’t like coconut.
I am the first to admit mine as not as pretty as Trader Joes version but they taste just as good, I promise.

Frozen Dark Chocolate Coconut Banana Bites
Frozen Chocolate Coconut Banana Bites will cure anyone's sweet tooth. This satisfying, kid friendly snack is bite sized. Bananas chunks are topped with dark chocolate and shredded coconut and then frozen. A great summer treat.
Ingredients
- 2 large ripe bananas, peeled and cut into 1/2 inch thick slices
- 1 1/2 cups dark chocolate chips {you can use milk or semi-sweet instead}
- 1 teaspoon vanilla extract
- 1/3 cup shredded coconut, sweetened {optional}
Instructions
- Line a baking sheet with parchment paper {you will need to be able to get the baking sheet in your freezer so you might need two small ones}.
- In a double boiler heat the water until it begins to simmer. In the top of the double boiler put the chocolate chips. Remove the water from the heat and put the top of the double boiler back on top of the water. Stir the chocolate chips until they are melted.
- Remove the chocolate from the boiling water. Using a fondue stick or a fork dip each banana slice into the chocolate until it is completely submerged {be careful not to loose the banana slice in the chocolate}.
- Place the chocolate banana slice on the parchment lined baking sheet. Once all of the bananas are done sprinkle shredded coconut over them.
- Place the baking sheet in the freezer for 3-4 hours, or until frozen through. Store in an airtight container until you are ready to eat them.

You can use unsweetened coconut if you would like.
Other ideas for the topping on the chocolate bananas: orange zest, a sprinkle of sea salt, crushed peanuts, crushed walnuts or just enjoy them plain without a topping.
I have made these with no topping and just the banana and chocolate-they are great like that as well. Sometimes I make half with coconut and half plain for those that don't like coconut.

Yum!! This looks like the perfect sweet treat. I also love banana bites from Trader Joe's - but I think I like your version better with the added coconut!
