Instant Pot Pork Roast

You will love how easy this Instant Pot Pork Roast is. This juicy, tender pork is marinated in a Mojo (mo-ho) sauce typically made with sour oranges, garlic, oregano, and cumin.  It is truly mouthwateringly delicious and can be used on sandwiches, in wraps, rice bowls or in tacos.

Today’s recipe would be a great meal-prep recipe that you can make and use throughout the week for a variety of meals. 

Some of my favorite pork recipes are made in a slow cooker or instant pot. I love how easy they are to make!

Today’s Instant Pot Pork Roast recipe uses a pork shoulder or a pork butt along with a Cuban Mojo style marinade to infuse flavor and create a tender, juicy pork.

You can use this pulled pork in these Cuban Rice Bowls, tacos, sandwiches, wraps or just serve it on its own with your favorite potatoes and vegetable.

WHAT INGREDIENTS ARE IN THIS INSTANT POT PORK SHOULDER RECIPE?

PORK: You will need a pork shoulder or pork butt roast that is about 4 pounds.

The key to a very juicy and tender pork roast is lots of fat. I suggest that you don’t remove the fat until after it is done cooking! 

You need to cut it into 4 to 5 large pieces but no smaller or they can get dry in the cooking process in the instant pot.

GOYA MARINADE- NARANJA AGRIA: This version of shredded pork is a mojo pork or Cuban pulled pork. This uses a Goya marinade {maranta agria} which you can find in many stores.

I have seen it at my local Giant Eagle and at Walmart supercenters. If you have a Hispanic store near you they will also carry it.

 This is a bitter orange marinade that I prefer to use which is linked here for reference, but don’t worry, if you can’t find it, you can use this recipe here

HOW DO YOU MAKE A PORK ROAST IN THE INSTANT POT?

Place pork roast pieces into a large ziplock bag.

In a mixing bowl, combine the Goya Marinade or the homemade Mojo marinade that is in the recipe instructions. 

Pour marinade over the roast and seal the ziplock bag and gently shake the marinade around the entire meat.

If you are planning on cooking the meat right away, allow it to sit on the counter and marinate in the sealed bag for at least 1 hour. 

It is best to place in the refrigerator and marinade overnight.

Pour meat and marinade into the instant pot.  Seal the lid and set on meat for 60 minutes.

When the timer goes off, allow it to rest and natural release for 30 minutes {this will help the meat stay moist and tender}.

Remove the meat from the instant pot and shred, removing any fatty pieces.

Remove a cup or more of the juice and serve it over the meat.

Serve over Cuban yellow rice, in tacos or on Cuban sandwiches.

HOW DO YOU MAKE A GOYA MARINADE?

If you can’t find any Goya Marinade, otherwise known as Mojo Criollo, you can make your own.

You can use fresh squeezed orange juice, lime juice, orange zest and lime zest.  

Below is the key ingredients for the mojo marinade:  

  • Olive oil – this helps the marinade stay on the meat.
  • Onion – I used a yellow onion but white will work as well.
  • Garlic – this recipe uses alot of garlic and boy does it taste good.  Don’t cut back!
  • Oregano – you can use Mexican oregano if you have it or regular if not.
  • Cumin – this marinade depends on these spices!
  • Bay Leaf – more seasoning
  • Salt and pepper
  • Cilantro – used to season after it’s cooked

CAN I MAKE THIS MOJO PORK IN A SLOW COOKER?

Yes, just follow steps 1-4 and then add to the slow cooker and cook on low for 8 hours or on high for 4 to 5. 

Check for doneness and don’t allow to overcook to prevent the roast from drying out.  Continue from step 6.

HOW DO I STORE THE CUBAN PORK?

  • Store in an airtight container in the refrigerator for up to five days.
  • You can also store the leftovers in an airtight container in the freezer for up to two months.

HOW DO I SERVE THIS ROAST?

  • RICE: The Cuban Mojo Pork Roast is delicious served over Cuban yellow rice. I like serving it with Cuban style black beans, sautéed bell peppers and diced tomatoes. 
  • TACOS: You can serve this roast in tacos with cilantro, pico de gallo and avocado similar to these Easy Cod Fish Tacos just switching the protein. 
  • SANDWICHES: This pulled pork works really nicely in sandwiches and sliders. It would be great in these Cuban Sliders or this Cuban Sandwich.
  • WRAPS: Add the pork to a wrap with cheese and vegetables. You could warm it up or eat it cold.

Ingredients

  • 1 - 4 pound pork shoulder (butt) boneless roast with fat (don’t remove the fat), cut into 4 to 5 large pieces.
  • 1 ½ cups Goya Marinade Naranja Agria
  • FOR THE HOMEMADE MOJO MARINADE:
  • ¾ cup fresh squeezed orange juice
  • ½ cup fresh lime juice
  • Zest of one orange
  • Zest of one lime
  • ½ cup olive oil
  • ½ large yellow onion, diced
  • 8 garlic cloves, minced
  • 2 teaspoons oregano
  • 2 teaspoons ground cumin
  • 2 bay leaves
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • ¼ cup cilantro, chopped

Instructions
