Mediterranean Chickpea Vegetable Salad - lunch

Mediterranean Chickpea Vegetable Salad

I have a major obsession with salads. This pregnancy my salad love has been amplified. I find this funny because with my other two pregnancies I didn’t want anything to do with salads. It is funny how you never know what a pregnancy will bring including what kind of cravings you will have.

While we lived in Chicago, Potbelly’s was one of my favorite quick lunch spots. When I was working full-time downtown Chicago or attending grad school it was my go-to for quick sandwiches and salads. I had two salads that I loved from Potbelly’s and rotated ordering when I would go in: the Mediterranean Salad and the Chickpea Veggie Salad. Today’s Mediterranean Chickpea Vegetable Salad is inspired by those two salads. I took ingredients from both of those and combined them into one, beautiful salad!

This Mediterranean Chickpea Vegetable Salad uses crisp lettuce and combines it with chickpeas, artichokes, roasted red peppers, feta cheese, diced tomatoes, red onion, cucumbers and is topped with this delicious Marzetti® Vineyard Dressing Balsamic Cabernet. This is the perfect foodie salad for those that love to get creative and put as many healthy, flavorful ingredients in salads as possible. I know a lot of people don’t think of putting artichokes and roasted red peppers in salads, but they really are wonderful together mixed with the chickpeas and fresh vegetables.

Now lets talk for a minute about that delicious Marzetti® Vineyard Dressing Balsamic Cabernet. It is a smooth and creamy red with hints of garlic and ground pepper for a full-bodied dressing. Marzetti® Vineyard Dressing has a variety of flavors – something for everyone – so this product offers a personalization of flavor profile: Asiago Peppercorn Chardonnay, Balsamic Cabernet, Citrus Pinot Noir, Dijon Champagne, Garlic & Herb Chardonnay, and Mixed Berry Merlot. They are inspired by the vine and full of beautiful, delicious flavors that pair wonderfully with all types of salads. Think about the creativity you could come up with and pair with these dressings. I can see the perfect brunch salad of spinach, strawberries, feta and pecans topped with the Citrus Pinot Noir, or an arugula salad with fresh mozzarella, tomatoes topped with the Garlic and Herb Chardonnay. The options are endless!

Mediterranean Chickpea Vegetable Salad - a healthy salad

Marzetti® Vineyard Dressings are the perfect way to inspire new ways of thinking about salads, and produce.  You don’t need to get in a salad rut when you have fun dressings, like these, in the fridge! Two of my other favorites are the Citrus Pinot Noir, a light red meets citrusy notes of orange, lemon and lime for the perfect blend and the Dijon Champagne that uses savory cracked brown mustard seed, garlic and onion meet for a crisp, fresh finish.

For those salad lovers out there today’s Mediterranean Chickpea Vegetable Salad is for you! This will help you mix up that boring salad routine and feel inspired and creative. I love making this salad for lunches during the week or serving it alongside dinner.

Marzetti® Vineyard Dressings can be found in the produce section of the grocery store* near the refrigerated dressings. Vineyard Dressing product locator Note: Marzetti® Vineyard Dressing has to be refrigerated.
