Mediterranean Chickpea Vegetable Salad
I have a major obsession with salads. This pregnancy my salad love has been amplified. I find this funny because with my other two pregnancies I didn’t want anything to do with salads. It is funny how you never know what a pregnancy will bring including what kind of cravings you will have.
While we lived in Chicago, Potbelly’s was one of my favorite quick lunch spots. When I was working full-time downtown Chicago or attending grad school it was my go-to for quick sandwiches and salads. I had two salads that I loved from Potbelly’s and rotated ordering when I would go in: the Mediterranean Salad and the Chickpea Veggie Salad. Today’s Mediterranean Chickpea Vegetable Salad is inspired by those two salads. I took ingredients from both of those and combined them into one, beautiful salad!
This Mediterranean Chickpea Vegetable Salad uses crisp lettuce and combines it with chickpeas, artichokes, roasted red peppers, feta cheese, diced tomatoes, red onion, cucumbers and is topped with this delicious Marzetti® Vineyard Dressing Balsamic Cabernet. This is the perfect foodie salad for those that love to get creative and put as many healthy, flavorful ingredients in salads as possible. I know a lot of people don’t think of putting artichokes and roasted red peppers in salads, but they really are wonderful together mixed with the chickpeas and fresh vegetables.

Mediterranean Chickpea Vegetable Salad
Ingredients
- 6 oz. lettuce of your choice {about 4 cups}, I used a butter lettuce mixture
- 1 - 15 oz. can of chickpeas, drained and rinsed
- 6 oz. roasted red peppers, drained, sliced
- 6 oz. artichokes, drained and sliced
- 2 medium tomatoes, diced {about 2 cups}
- 2.5 oz. crumbled feta cheese
- 1/4 cup red onion, chopped
- 1/2 large cucumber, peeled, chopped
- Your favorite balsamic dressing
Instructions
Toss all ingredients together in a large salad bowl.
Lightly drizzle dressing over top and gently toss to coat. Serve for lunch with crusty bread or as a side salad with dinner.
