Mediterranean Style Tofu Tacos are perfect for those trying to incorporate more plant-based meals into their diet or would also be a great option for lent. These meatless, plant-based tacos that use crumbled tofu and coated in extra virgin olive oil and paprika, oregano, cinnamon and garlic powder. The tofu is crumbled and then baked in the oven until just crispy and the perfect vegetarian taco filling!

I know many of your are trying to incorporate more plant-based meals into your diet. If so, this is a recipe for you! The tofu makes the perfect healthy filling in these Mediterranean inspired tacos. You could use tortillas or try pita. 

Once you add the tofu to the tortilla you will then top with your favorite Mediterranean ingredients. I like to add feta cheese, an easy tomato, cucumber and red onion “salsa” and some fresh parsley and green onion.

Other great Mediterranean toppings you could add to these tacos are kalamata olives, artichokes, hummus, tzatziki, roasted red peppers or diced bell peppers. These tacos are so easy to make and are perfect for a healthy, quick weeknight meal.

Recipe Ingredients You’ll Need:

  • Tofu: I used extra firm tofu in this recipe. I find that it holds up better and also absorbs the flavors.
  • Spices: The spices really add so much to these tacos. I used paprika, oregano and garlic powder.
  • Tortillas: I like to serve the tofu and toppings in tortillas. You can do corn or flour or even hard shell taco shells. This taco tofu would also be great in a rice bowl or in enchiladas.

How to Make Tofu Tacos:

Start by preheating the oven to 400 degrees F (400 F).

Step 1: Mix Spices: In a small mixing bowl combine the paprika, oregano and garlic powder. Mix well.

Step 2: Crumble Tofu: In a medium mixing bowl crumble the tofu using your hands. Add 2 tbsps. olive oil and the spice mixture. Mix the olive oil and spices well until all of the tofu is covered. Spread the tofu on a baking sheet.

Step 3: Spread on Baking Sheet: Spread the tofu on a baking sheet.

Step 4: Bake Tofu: Bake the tofu in the oven for 30 minutes, using a spatula or spoon to mix is half way through or until the tofu is slightly browned and crispy. You can bake more or less depending on the texture you like.

Step 5: Mix the Salsa: While the tofu cooks combine the tomatoes, cucumber and red onion in a medium mixing bowl. Add 2 tbsps. olive oil and the lemon juice and mix well. Set aside. Remove the tofu and spoon into the tortillas.

Step 6: Add Garnishes: Top the tacos with the tomato salad, feta cheese, fresh parsley and green onions.

Ways to Modify These Tacos:

  • Beans: Beans would be a nice addition to these tacos. Try black beans, kidney beans, white beans or chickpeas. 
  • Vegetables: Vegetables would also be nice addition to these tacos. Some options are radishes, celery, carrots, bell peppers or poblanos. 
  • Spices: If you would rather use spices other than Mediterranean spices try cumin, paprika, coriander or chili powder. 
  • Herbs: Fresh herbs always take tacos to the next level. I like to add cilantro, dill or mint if I have it on hand.

They are as long as you use plant-based toppings and tortillas.

Can I replace the tofu with a different plant-based protein?

Ingredients 

  • 16 ounces extra-firm tofu, pressed of excess moisture, crumbled
  • 1/4 cup extra virgin olive oil, divided
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 8-10 small sized corn or flour tortillas
  • 1 cup of cherry tomatoes, halved
  • 1/2 of a small english cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 of a lemon, juiced
  • Feta cheese for garnish
  • Fresh parsley, chopped
  • Green onion, chopped

Instructions

  • Press the tofu to get rid of the excess moisture, put tofu in a bowl and then crumble it with your hands. Set aside.
