No Churn Peppermint Chip Ice Cream is like Christmas in July and the perfect summer indulgence.  Creamy ice cream is made out of five ingredients and has the cool, candy-like flavor of peppermint mixed with chocolate chips.

Summer is in full swing and somehow we are almost in August! I can’t believe I am writing that–summer always goes way too fast for me.  You can’t have a complete summer without a lot of creamy, indulgent ice cream. Today’s No Churn Peppermint Chip Ice Cream is just that–indulgent, creamy and the perfect refreshing ice cream for your summer.

My friends at REAL® Seal and I are partnering up for National Ice Cream month to bring you this easy, five ingredient recipe that doesn’t require an ice cream maker.  All you need is a mixer and enough patience to let the ice cream sit in the freezer for 5-6 hours after making it.

Peppermint Ice Cream

When it comes to sweets and indulgent foods I have to admit that ice cream is it for me.  It is my weakness and I will pass up almost all other sweets for a good, creamy bowl of ice cream.  My favorite flavors include mint, peppermint and raspberry.  When I made this Peppermint Cacao Smoothie Recipe recently  I knew I had to try making peppermint ice cream.

While most of the recipes you will find on A Cedar Spoon are healthy I believe in still having those indulgences and enjoying life’s treats.  This ice cream recipe uses heavy whipping cream and sweetened condensed milk to create a creamy, rich texture (I never said this recipe was healthy!).

No Churn Peppermint Chip Ice Cream is like Christmas in July and the perfect summer indulgence. Creamy ice cream is made out of five ingredients and has the cool, candy-like flavor of peppermint mixed with chocolate chips.

Ingredients

  • 114oz can of sweetened condensed milk
  • 1 Tablespoon vanilla extract
  • 1 teaspoon peppermint extract (a bit less for a less peppermint flavor)
  • 2 cups heavy whipping cream
  • 1/2 cup dark chocolate chips (or candy of your choice)

Instructions

  1. In a large mixing bowl whisk the condensed milk, vanilla and peppermint extract. Set aside.
  2. In a mixer, beat whipping cream until soft peaks begin to form. Gently fold the whipping cream into the first bowl. Next fold in the chocolate chips or candy of your choice.
  3. Transfer into a freezer safe dish and cover. Freeze until firm, about 5-6 hours.

Notes

I used a bread pan and lined it with parchment paper to freezer the ice cream. Make sure you cover it so it doesn’t get freezer burn.
