Summer is in full swing and somehow we are almost in August! I can’t believe I am writing that–summer always goes way too fast for me. You can’t have a complete summer without a lot of creamy, indulgent ice cream. Today’s No Churn Peppermint Chip Ice Cream is just that–indulgent, creamy and the perfect refreshing ice cream for your summer.
My friends at REAL® Seal and I are partnering up for National Ice Cream month to bring you this easy, five ingredient recipe that doesn’t require an ice cream maker. All you need is a mixer and enough patience to let the ice cream sit in the freezer for 5-6 hours after making it.
When it comes to sweets and indulgent foods I have to admit that ice cream is it for me. It is my weakness and I will pass up almost all other sweets for a good, creamy bowl of ice cream. My favorite flavors include mint, peppermint and raspberry. When I made this Peppermint Cacao Smoothie Recipe recently I knew I had to try making peppermint ice cream.
While most of the recipes you will find on A Cedar Spoon are healthy I believe in still having those indulgences and enjoying life’s treats. This ice cream recipe uses heavy whipping cream and sweetened condensed milk to create a creamy, rich texture (I never said this recipe was healthy!).

Made this last night, added a combo of white, milk & dark bits with mini marshmallows. You only need a small amount as it is very sweet but absolutely delicious and very easy to make.
