One Pot Cajun Pasta brings you the bold, spicy flavors of New Orleans and Cajun cuisine in a one pot pasta dish. This pasta mixes vegetables, sausage, pasta and mixed into a spicy, creamy sauce that you will want to soak up with a big slice of crusty bread.

ONE POT CAJUN PASTA 

For my birthday this year my husband and I tried a Cajun Italian restaurant for dinner.  

I heard wonderful things about their food and knew that I had to try it, especially because I am a huge fan of Italian food as well as dishes that have that Cajun kick.

The food was everything I hoped for and included a warm bowl of spicy gumbo, a salad with a spicy dressing, Cajun inspired tacos and of course, a big slice of Mississippi mud pie.

Today’s One Pot Cajun Pasta was inspired by our dinner and all of those warm, rich spicy flavors that you get when you go to New Orleans and experience Cajun food.

One Pot Cajun Pasta

This pasta comes together in one pot to save you all of that clean up time after dinner.  

One Pot Cajun Pasta involves using a lot of chopped ingredients, including onion and bell peppers.  

I knew this would the perfect recipe to try my new set of Calphalon Self-Sharpening Cutlery.

One Pot Cajun Pasta involves a sweet onion, two bell peppers and sausage so you can put those knives to good use.

Once everything is chopped throw it in a large pot with the Old Bay and Cajun Seasoning and sauté over medium heat until the sausage is browned and the peppers and onion are soft.

Then you add the chicken broth, fire roasted tomatoes, cream, more spice and the pasta bring it to a boil, cover and simmer for 15 minutes until the pasta is tender. It is as easy as that!

One Pot Cajun Pasta brings you the bold, spicy flavors of New Orleans and Cajun cuisine in a one pot pasta dish. This pasta mixes vegetables, sausage, pasta and mixed into a spicy, creamy sauce that you will want to soak up with a big slice of crusty bread.

Ingredients

  • 2 Tablespoons olive oil
  • 1/2 sweet onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 garlic cloves, minced
  • 1 lb. andouille sausage, chopped
  • 2 teaspoons + 1 teaspoon cajun seasoning
  • 1 teaspoon Old Bay
  • 1 14.5 oz. can fire roasted diced tomatoes
  • 2 Tablespoons tomato paste
  • 3 cups chicken broth
  • 1/4 cup cream
  • 8 oz. penne pasta {or pasta of your choice}
  • 1/4 cup freshly chopped parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot heat the olive oil over medium high heat. Add the onion, bell pepper, yellow bell pepper, garlic, sausage, 2 teaspoons cajun seasoning and 1 teaspoon old bay. Sauté for about 8 minutes, until the sausage is browned and the peppers and onion are soft.
  2. Add the remaining 1 teaspoon cajun seasoning, fire roasted tomatoes, tomato paste, chicken broth, 1/4 cup cream, 8 oz. penne pasta and bring to a boil. Cover and turn down heat to medium low and simmer for 13-15 minutes or until the pasta is cooked. Stir in the freshly chopped parsley and salt and pepper to taste.
  3. Serve warm with crusty bread to soak up all those good juices!

Notes

Variations:
You can use any color bell pepper you would like.
Add a jalapeño for even more spice.
You can use regular diced tomatoes if you want. I like the fire roasted for the extra flavor.
Use any pasta you would like. I tend to think penne and rigatoni work best.

OMG! This dish tasted AMAZING! Probably my favorite recipe on this sight. Did not change a thing about the recipe and wouldn't. Love one pot dishes....makes cleaning up a lot easier!
