Today’s One Pot Cheesy Hamburger Pasta will remind you of your favorite childhood meal. Comforting, cheesy and packed with flavor this makes a good dinner during the week for your family and will leave you with leftovers to use for lunches or dinners the rest of the week.

My favorite part about this meal is that it cooks in one big pot {or a big skillet if you have one}.

When the dish is done cooking I love loading it up with garnishes like parsley, green onions and freshly chopped tomatoes.

If you haven’t tried a one pot or one skillet meal you are in for a treat. You cook everything in that one pot which means you aren’t doing multiple dishes.   • Beef: This recipe uses ground beef. I suggest 80/20 and to make sure that you drain the fat from the beef before adding everything else in.
  • Vegetables: The vegetables are a mixture of onion, garlic and diced tomatoes. You can also add other veggies like celery or bell peppers.
  • Pasta: I suggest a medium sized pasta for this dish. I think it works well with the ground beef. You can use any shape you want.
  • Cheese: A mixture of cheese in this pasta dish is Monterrey Jack and cheddar cheese.

How to Make this One Skillet Cheesy Hamburger Pasta

Step 1: Cook Beef: In a large pot or dutch oven heat olive oil over medium high heat. Add onion and garlic and sauté for 2 minutes. Add the ground beef and continue cooking until the beef is cooked through. Drain excess fat.

Step 2: Add Remaining Ingredients: Stir in diced tomatoes, tomato sauce, chicken broth and pasta.

Step 3: Boil: Bring to a boil; cover, reduce heat to medium low and simmer until pasta is cooked through and tender, about 12-14 minutes. Remove from heat, top with cheese and cover until the cheese melts.

Sprinkle the green onions and parsley and serve warm.

Storage Tips

Store this Hamburger Pasta in an airtight container in the fridge for 3 days, or in the freezer for up to 3 months. When ready to enjoy place into a skillet and warm through on the stove top until piping hot.

Ingredients 

  • 2 tablespoons olive oil
  • 1/2 sweet onion, chopped
  • 2 cloves garlic , minced
  • 1 pound ground beef, fat drained
  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 2 cups chicken broth
  • 8 ounces pasta, medium sized
  • 1 cup Monterrey jack cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 1 bunch green onions, green parts chopped
  • parsley, chopped

Notes

  • Whatever cheese you have on hand works great in this especially any type of cheddar.

    Just had two helpings of this and I’m stuffed! It was delicious and the whole family loved it. Very easy to make all in one pot. I would make it in the Dutch oven if you have one because it was to the top of my pan.
