We just returned from a weekend in South Haven, Michigan.  It was such a beautiful weekend and the weather was perfect.  We were camping with my husband’s family which meant Will and Drew got a lot of cousin time, which they love.  When Sunday night rolled around I knew that Monday would be rough. Any time we go away for the weekend it takes a good day to get back into the swing of things and get organized. I made a few jars of this Overnight Refrigerator Strawberry Banana Coconut Steel Cut Oatmeal which made breakfast Monday morning so easy.

I like to have breakfast waiting for me in the morning.  To be totally honest mornings in my house can be a bit crazy and I don’t even have school aged kids yet.  Between two hungry toddlers and trying to get everyone ready for the day, mornings can be a challenge.

When you prep this Overnight Refrigerator Strawberry Banana Coconut Steel Cut Oatmeal the night before, you don’t have to worry about making breakfast while the chaos swirls around you.  You have it ready and waiting when you wake up.  Another nice thing about this is if you make a double or triple batch, you can send one to work with your significant other or bring it to work for yourself.

These Overnight Refrigerator Strawberry Banana Coconut Steel Cut Oatmeal aren’t your basic overnight oats, but have strawberries, bananas and coconut milk in them for extra flavor and excitement.  If you aren’t a fan of coconut milk, you can easily substitute your favorite milk from plain milk to almond milk to soy milk.  I used plain yogurt in my oats but once again I think you can easily swap that for your favorite yogurt like Greek yogurt to give it a little extra tang and protein.

I love the texture of steel cut oats but some people don’t like how chewy they are.  If you aren’t a fan then add an extra 1/4 cup of milk to the oats and microwave them for 1 to 1 1/2 minutes to help them become softer.  Another thing that is great with this recipe is that you can substitute whatever fresh fruit you have on hand from blueberries, to blackberries, to peaches. Your kids will never get bored with these oats.

    I never ate oatmeal growing up, I always had grits. My hubby on the other hand always had oatmeal. We fight about breakfast but after this maybe not I have tried steel cut oats before and LOVED the texture and their flavor is intensified! Thanks!

      South Haven is the best! I grew up going there because I lived 30 minutes away. Now it is about five hours but we still try to get there once a year. You can’t beat the Lake Michigan water and beaches and all the fun things to do there. 🙂
