I love roasted beets in salads.  I know not everyone is on board with beets {my husband} but I have always really liked them. I can eat them plain, but I especially enjoy them in a light salad.  Today’s Roasted Beet Salad with Goat Cheese and Pecans makes a really great light lunch salad or addition to your weeknight dinners.

The roasted beets pair with soft, creamy goat cheese, crunchy, sweet pecans and one of my favorite greens, arugula.  The salad is topped off with Newman’s Own® Balsamic Vinaigrette, which is light but a great compliment to the salad.

You can use golden or red beets in this salad, either taste wonderful.  I have also used walnuts instead of pecans which are a good addition, just less sweet. If you make this salad ahead of time I suggest you wait to put the dressing on until you are ready to eat, so the salad doesn’t wilt.

I make a big container of this salad and eat it for lunches during the week. It is nice to have something easy to eat when I am busy feeding my kids.

Roasted Beet Salad with Goat Cheese and Pecans

Roasted Beet Salad with Goat Cheese and Pecans with Newman’s Own® Balsamic Vinaigrette is a light, but flavorful salad that makes a perfect lunch or addition to your dinner table.

Ingredients

  • 3-4 medium beets, scrubbed, leaves trimmed, roasted {you can use red or golden beets}
  • Olive oil for cooking beets
  • 7 cups arugula
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup pecans halves
  • 2 Tablespoons Newman's Own Balsamic Vinaigrette

Instructions

  1. Preheat oven to 375 degrees F. Scrub and trim the leaves off of the beets. Lightly coat the beats with olive oil.
  2. Using aluminum foil wrap the beets and place them on a baking sheet. Roast in the oven for approximately 50-60 minutes, or until cooked through.
  3. While the beets are cooking combine the arugula, goat cheese and pecans in a large salad bowl.
  4. Once the beets have cooled add them to the salad and toss the dressing in.
  5. Serve as a light lunch or with dinner.

This type of salad is right up my alley. My husband and I both love arugula, and beets and goat cheese are a classic combination. We have dinner salads frequently, so it's hard to pick a favorite, but one I like includes chopped apples, greens, candied pecans, and dried cherries.
