Southwestern Avocado Toast

Southwestern Avocado Toast is a fun way to start the day or add some protein into your afternoon snack. Take your toast to the next level with a creamy guacamole that is spread on your favorite toast and then topped with black beans, sweet corn, chopped tomatoes, fresh cilantro and a sprinkle of crushed red pepper and squeeze of lime juice.

Southwestern Avocado Toast

Recently I shared a Tropical Avocado Toast with you guys and have fully jumped on the avocado toast train. It is such a great way to incorporate healthy ingredients into the start of my day or even as an afternoon snack. I have been loving this Southwestern Avocado Toast lately and had to share the simple recipe with you.

Now that I am 25 weeks pregnant I am really trying to eat as healthy as possible and add protein into my diet so I can keep up my energy. Lets be honest..when you are 25 weeks pregnant and chasing two young boys around you need all the help you can get.

Southwestern Avocado Toast is my favorite way to wake up! So easy to make!

Southwestern Avocado Toast takes your favorite toasted bread and spreads creamy, veggie infused guacamole on top and then topped with black beans, sweet corn, chopped tomatoes, fresh cilantro and your favorite Mexican cheese {optional}. I always finish my avocado toast off with a sprinkle of crushed red pepper because I just love that extra spice. For the Southwestern Avocado Toast I also like to add a squeeze of lime juice and a dash of salt to the toast.

Lets talk for a minute about the guacamole that is used on this toast. To me, that is the most important part of avocado toast, obviously. You want a creamy, flavorful base for that toast! My friend’s at Sabra recently came out with a new innovation to their guacamole line: Sabra Veggie Fusions Guacamole . I am loving them!! The fact that they are still that same creamy guacamole flavor but with added vegetables, makes me happy.

If you guy haven’t tried their guacamole you have to. It is so convenient and tastes really great. We got through a container so fast in my house!

Their guacamole is made with ripe, fresh, Hass avocados mixed with delicious crisp vegetables for a nutritious dip, rich in antioxidants, vitamins and fiber.  The fresh vegetables adds fresh flavor and reduces the overall fat content by 30% (3g of fat vs. 5g and 4.5g of fat per serving of the two leading brands of classic guacamole). These are available in three flavors- Garden Vegetable, Mango Lime and South Western {which I used in this recipe}. You could use any of those three in today’s Southwestern Avocado Toast and it would taste great. All three varieties are vegan, kosher, gluten-free and made with the best quality ingredients.

Southwestern Avocado Toast is a fun way to start the day or add some protein into your afternoon snack. Take your toast to the next level with a creamy guacamole that is spread on your favorite toast and then topped with black beans, sweet corn, chopped tomatoes, fresh cilantro and a sprinkle of crushed red pepper and squeeze of lime juice.

Ingredients

  • 2 slices of your favorite bread, toasted
  • 1/2 of a container of Sabra Veggie Fusions South-Western Guacamole
  • 4 cherry tomatoes, chopped
  • 1/4 cup sweet corn
  • 2 Tablespoons black beans

Garnish:

  • Sprinkle on your favorite Mexican cheese or any cheese of your choice
  • Handful of fresh cilantro
  • Squeeze of lime juice
  • Crushed red pepper
  • Salt

Instructions

  1. Toast your bread. Once toasted spread the guacamole on evenly on each slice of toast. Top with the tomatoes, sweet corn and black beans. Garnish with your favorite toppings like your favorite cheese, fresh cilantro, a squeeze of lime juice, crushed red pepper and salt.
  2. Enjoy!

Notes

Feel free to mix up the fresh vegetables you add to the toast and the type of cheese depending on what you like!
