Get your children to eat their vegetables with these Sweet Potato Cinnamon Pancakes. A sweet, cinnamon pancake that the whole family will love.

Hey guys!
Last week Andrew turned one month old. Time sure did fly by and we are slowly but surely adjusting into our new lives as parents of two little boys. We just love it and are so thankful for the support and love from friends and family.

This time around I feel like the sleep deprivation has been harder to deal with but I think it is because I need to have energy for Will, who is an energetic 2 1/2 year old. I am happy to say that I am starting to learn how to function on little sleep again with the help of my good friend–coffee!
Speaking of coffee these Sweet Potato Cinnamon Pancakes go perfectly with a warm cup of coffee.
Will just loves his “cancakes” (he can’t pronounce the “p” in pancakes–it is pretty cute!). We like to try and make something fun to eat on the weekends as a little treat. French toast, waffles or pancakes usually wins.

I decided that if my son loves pancakes that much there has to be a good way to sneak some extra healthy stuff in them. Win-win, right? These Sweet Potato Cinnamon Pancakes are not only delicious but perfect for the picky eaters that won’t eat things like sweet potatoes! The sweet potatoes add a subtle sweet flavor and mixed with the cinnamon is just warming and perfect with a cup of coffee. My son devoured these and had no idea what was in them. I used a boxed whole grain pancake mix that I buy from Trader Joes but feel free to use whatever you fancy. If you like to make homemade pancake mix that works great or store bought works great as well.

To make the sweet potato puree head over to this website which is how I make it. Yes, it says how to make sweet potato puree for babies but it is the same thing you would use in these pancakes. I like to make a big batch and save the leftovers for other recipes or for another weekend of pancakes. You can freeze the leftovers for up to three months.

I love sweet potatoes too–the nice thing is they blend in so you can’t really taste it! My husband who can be picky about things like hidden veggies didn’t even notice! 😉
