I have made a lot of fritters in my kitchen over the years, but sweet potato fritters is the one my kids actually ask for by name. The One Step That Makes or Breaks Crispy Fritters
Here’s the truth most recipes gloss over: sweet potatoes hold a lot of water, and if you skip squeezing that water out, your fritters will steam instead of crisp, and they’ll fall apart when you try to flip them.
After you shred and salt the sweet potatoes, let them sit for 10 to 15 minutes. The salt pulls moisture out on its own. Then transfer them to a clean kitchen towel or cheesecloth and wring them out hard, like you’re wringing out a wet washcloth. You’ll be surprised how much liquid comes out, and that’s exactly the point. The drier the shreds feel in your hand, almost powdery rather than damp, the crispier your fritters will turn out.
