Shaved brussels sprouts work great in salads. They remind me of the texture of cabbage and pair wonderfully with crisp apples and creamy goat cheese.

Today’s Brussels Sprouts Apple Goat Cheese Salad is one that will be on my Thanksgiving table this year. It is full of a variety of textures and flavors which makes this an interesting salad to put on your table. 

As with all salads you can mix things up with this brussels sprouts salad but I included shaved brussels sprouts, chopped apples, walnuts, dried cranberries, red onion and goat cheese in mine.

I top mine with a simple homemade balsamic dressing but you can use anything you have on hand.

Brussels Sprout Apple Goat Cheese Salad Half Bowl

You will love this easy recipe and the simple ingredients it uses for the marinade ingredients. It is one of my favorite recipes! 

  • Brussels sprouts: You either want to buy whole brussels sprouts and shred them using a food process or you can buy a bag of shaved brussels sprouts. I often find mine at Trader Joes.
  • Apples: Use any of your favorite apples in this recipe. I tend to like sweet apples.
  • Nuts: This salad uses walnuts but you could also use pistachios, almonds or pecans.
  • Dried Cranberries: Dried fruit, like dried cranberries, is a nice sweet addition to offset the other flavors. You also can use dried apricots, dried dates or dried raisins.
  • Cheese: Creamy goat cheese is my go-to in this salad. You also could sub in feta cheese.
  • Dressing: The dressing is a light fall style dressing mixing balsamic vinegar, lemon juice, Greek yogurt, honey and apple cider vinegar.

How do you Make this Brussels Sprout Apple Salad

Step 1: Add Ingredients to Large Bowl: Place the brussels sprouts, apples, walnuts, dried cranberries, red onion and goat cheese in a large salad bowl. Drizzle the lemon juice over the salad and gently toss.

Step 2: Create Dressing: In a mason jar or a salad dressing container mix together the balsamic vinegar, olive oil, Greek yogurt, honey, apple cider vinegar, salt and pepper and stir until combined.

Step 3: Add Dressing: Pour over the salad and gently toss until the salad is coated.

Storage Tips

Store this salad for up to 3 days in the fridge. Make sure to add more dressing to freshen the salad before serving again.

You can use a very sharp knife, a food processor with a large slice blade or a mandoline.

How do I prevent my apples from browning?

Toss the apples in a small amount of lemon juice to prevent them from browning.

Ingredients 

  • 1 bag shaved brussels sprouts, or about 1 pound
  • 4 medium apples, chopped {I like to use gala, fuji or honeycrisp}
  • 3/4 cup walnuts, chopped
  • 3/4 cup cranberries, dried
  • 1/4 red onion, thinly sliced
  • 1 cup goat cheese, crumbled

For the dressing:

  • 1/2 of a lemon, juiced
  • 1 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon Greek yogurt
  • 1 teaspoon honey
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions 

  • Place the brussels sprouts, apples, walnuts, dried cranberries, red onion and goat cheese in a large salad bowl. Drizzle the lemon juice over the salad and gently toss.
  • In a mason jar or a salad dressing container mix together the balsamic vinegar, olive oil, Greek yogurt, honey, apple cider vinegar, salt and pepper and stir until combined.
  • Pour over the salad and gently toss until the salad is coated.

Notes

  • You can use pre-shredded brussels sprouts (found in the produce section) to save time.
