BRUSSELS SPROUTS APPLE GOAT CHEESE SALAD
Have you tried a shaved brussels sprout salad?
Shaved brussels sprouts work great in salads. They remind me of the texture of cabbage and pair wonderfully with crisp apples and creamy goat cheese.
Today’s Brussels Sprouts Apple Goat Cheese Salad is one that will be on my Thanksgiving table this year. It is full of a variety of textures and flavors which makes this an interesting salad to put on your table.
As with all salads you can mix things up with this brussels sprouts salad but I included shaved brussels sprouts, chopped apples, walnuts, dried cranberries, red onion and goat cheese in mine. I top mine with a simple homemade balsamic dressing but you can use anything you have on hand.
You might be wondering how to make the shaved brussels sprouts. There are two easy ways to do this. The easiest way is to buy a bag at your local grocery store if they have it.
Trader Joes carries a bag of shaved brussels sprouts, making this salad even easier.
If you have whole brussels sprouts and want to shave them yourself I suggest using a mandoline. This makes the process pretty easy, just be sure to use caution so you don’t cut your hand.
WHAT ADDITIONAL INGREDIENTS CAN I USE IN THIS SALAD?
- Try switching up the walnuts for a different nut. I like silvered almonds, sesame seeds or pecans.
- Use a different cheese. I think that feta, shaved parmesan or sharp white cheddar work great.
- Add crispy chickpeas or regular chickpeas for protein.
- Add matchstick carrots, chopped greens like kale or even mix in some cabbage.
- You can use other types of dried fruits. I think raisins or dried apricots work nicely.
- Do you like extra sweetness in your salads? Try a handful of pomegranate seeds.

Brussels Sprout Apple Goat Cheese Salad

Ingredients
For the salad
- 1 - 10 or 12 ounce bag of shaved brussels sprouts or about 1 pound
- 4 medium apples, chopped {I like to use gala, fuji or honeycrisp}
- 3/4 cup of walnuts, chopped
- 3/4 cup dried cranberries
- 1/4 of a red onion, thinly sliced
- 1 cup goat cheese, crumbled
- 1/2 of a lemon, juiced
For the dressing
- 1 Tablespoons balsamic vinegar
- 1 Tablespoon olive oil
- 1 Tablespoon Greek yogurt
- 1 teaspoon honey
- 1 Tablespoon apple cider vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Place the brussels sprouts, apples, walnuts, dried cranberries, red onion and goat cheese in a large salad bowl. Drizzle the lemon juice over the salad and gently toss.
- In a mason jar or a salad dressing container mix together the balsamic vinegar, olive oil, Greek yogurt, honey, apple cider vinegar, salt and pepper and stir until combined.
- Pour over the salad and gently toss until the salad is coated.
