When the weather gets cold it is time to load your body with veggies, garlic and chicken broth to boost your immune system. 

We love this Chicken Tortellini Soup. It is such a flavorful soup.

One of my favorite things about today’s soup is that it cooks in the slow cooker. It is a hearty soup the whole family will love.

I am always down for a crockpot soup that I can dump in the morning and come home to a delicious meal.  Now that school is back in full swing where I live and the kids are playing sports I need quick, healthy dinner options.

I also love having a healthy soup for leftovers at lunch time during the week.  It’s an easy meal that can quickly be heated up.

My kids also love soups, especially soups that mimic classic chicken noodle soup.

When I pack lunches for my kids I am always looking for healthy meals to send with them.

This soup is one I will put in a thermos for them – they love it! 

If you want even more immunity boosting properties in this soup add some fresh ginger or ground ginger.

I also enjoy adding lemon juice sometimes to brighten the soup.

Recipe Ingredients

  • CHICKEN: This recipe uses boneless skinless chicken thighs. I love using chicken thighs in slow cooker soups because it is a more tender cut of the chicken and also very flavorful. You can also use tenders or chicken breasts or shredded chicken that you have as leftovers. 
  • VEGETABLES: This soup uses your typical chicken noodle soup vegetables like carrots,
  • CHICKEN: This recipe uses boneless skinless chicken thighs. I love using chicken thighs in slow cooker soups because it is a more tender cut of the chicken and also very flavorful. You can also use tenders or chicken breasts or shredded chicken that you have as leftovers. 
  • VEGETABLES: This soup uses your typical chicken noodle soup vegetables like carrots, sweet onion and celery. If you want to add other fresh vegetables you can. I like using zucchini or bell peppers too. 
  • SPICES: Italian seasoning and paprika add a nice balance of earthy herbs and the paprika gives it a little extra flavor. 
  • TORTELLINI: This soup uses frozen cheese tortellini in the soup. I add the tortellini at the end of the soup and let it continue to cook for about 30-45 minutes until the tortellini is cooked through.
  • BROTH: This soup uses chicken broth or chicken stock but you can use vegetable broth in its place.
  • SPICES: Italian seasoning and paprika add a nice balance of earthy herbs and the paprika gives it a little extra flavor. 
  • TORTELLINI: This soup uses frozen cheese tortellini in the soup. I add the tortellini at the end of the soup and let it continue to cook for about 30-45 minutes until the tortellini is cooked through.

How Do You Make This Easy Chicken Tortellini Soup Recipe

1. Add Vegetables & Spices: Add the carrots, celery, onion, garlic, chicken stock, Italian seasoning, paprika, salt and black pepper to the slow cooker. Gently stir everything together.

2. Add Chicken: Add in the chicken thighs to the slow cooker. Cook on high 4 hours or low 6 hours.

3. Shred Chicken: Remove the chicken from the slow cooker and shred using two forks and return the chicken to the slow cooker.

4. Add Tortellini: Add in the cheese tortellini {or tortellini of your choice}. Stir well.

5. Cook Pasta: Cover and cook an additional 5 minutes or until pasta is cooked through {check the package of the tortellini for cook time}. Serve in soup bowls. Garnish with fresh parsley, red pepper flakes and Parmesan cheese.

Serve with garlic bread.

Store leftovers in an airtight container.

Tips for Modifying this Slow Cooker Chicken Tortellini Soup:

There are a variety of ways you can modify this soup. Here are a few ways I like to change things up and also some cooking tips to help you along the way!

  • Vegetables: Add additional vegetables to your soup including peas, green beans, zucchini and mushrooms. I also enjoy adding greens like fresh baby spinach, kale or swiss chard.
  • Creamy: Make this soup a creamy one. You can add heavy cream to the soup to thicken it up and make it a richer cup of soup. 
  • Chicken: You can use any type of chicken you want. I really like boneless skinless chicken breasts but you can use chicken thighs or chicken tenderloins.
  • Tortellini: You can use fresh or frozen tortellini. I especially love using fresh cheese tortellini in this soup.
  • Skip the Chicken: Skip the chicken. You certainly don’t have to add chicken to this soup. If you want to add additional protein that isn’t meat, try adding beans. I like chickpeas or white beans. You also could add Italian sausage instead of chicken. 
  • Leftover Chicken: You can use leftover chicken in place of the chicken breasts in this recipe. Just added the shredded chicken or rotisserie chicken in at the end and let it warm in the soup for about 20 minutes. 
  • Stove-Top: If you don’t want to use a crockpot you can use a large pot and cook it on the stove over medium-high heat. This is a great way to use the shredded chicken and just boil the tortellini and add it in or you can boil the chicken in the soup. 
  • Freezing This Soup: This soup freezes well. I would suggest keeping the orzo separate if you plan to freeze some because the orzo can soak up all of the broth and the orzo sometimes becomes mushy. I just add the orzo as I eat the soup.

How Long Do You Boil Frozen Tortellini?

You don’t need to thaw tortellini and can just add them to your pot of boiling water frozen. Cook at a gentle boil for about 6 minutes {or whatever the package says}.

Tip: To keep the pasta from sticking, stir during the first minute or two. Drain and enjoy.

What to Serve with Tortellini Soup:

I love a light salad with my soups. Try this Lemon Arugula Salad, this Winter Slaw or this Kale Salad.

If you want to serve a starch with your soup try my Gouda Smashed Potatoes, Cilantro Roasted Potatoes or Paprika Roasted Potatoes.

For vegetable sides I have a few I really like paired with this soup. My favorites are these Mediterranean Roasted Vegetables, Turmeric Cauliflower or this Cheesy Cauliflower.

Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 large carrots, peeled and chopped
  • 2 stalks of celery, peeled and diced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 6 cups of chicken stock
  • 1 tsp. Italian seasoning
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • 1/8 teaspoon black pepper
  • 19 ounces frozen cheese tortellini
  • Fresh Italian parsley, chopped
  • Freshly grated Parmesan cheese

Instructions

I love your site and have made several dishes. I have been sick this week and made your recipe for chicken tortellini soup. It smelled amazing in my house all day, but after adding the tortellini for the suggested amount of time as stated in your recipe, the tortellini was mushy and soaked up all of the broth. Is that supposed to say 4-5 minutes (which is the normal cook time for frozen tortellini)? The recipe says 45 minutes and that was WAY too long.
