I shared a recipe for this Tuscan Bean Soup last week because this time of year soups are on rotation on my house every week.

Today’s Tortellini Sausage Soup is another recipe I love making.

I also love this Chicken Tortellini Soup recipe that is a chicken broth based soup similar to today’s recipe. 

It is hearty, comforting and will remind you of your favorite pasta dish but in soup form. If you like tortellinis this recipe is for you. 

I like to serve this soup with a simple Lemon Arugula Salad, Roasted Broccoli and some homemade bread.

If you like this soup but want it to be vegetarian feel free to leave out the sausage.

You could bulk this up with white beans or chickpeas for extra protein.

I also love adding other vegetables like mushrooms, zucchini or bell peppers. If spicy is your thing add more crushed red pepper.

Recipe Ingredients

  • Sausage: I used Italian sausage in this soup and it adds a good amount of flavor! You can use whatever you favorite sausage is. If you like a spicier soup try a spicy Italian sausage. 
  • Vegetables: I like to load my soups with vegetables. This soup uses onion, carrots, celery and diced tomatoes. You can add whatever you like from zucchini to mushrooms to bell pepper. 
  • Tortellini: The tortellini are a nice addition to this soup. I used a cheese tortellini but feel free to use whatever you favorite variety is! 
  • Greens: Bulk up your soup and add nutritional value with greens. I added chopped kale but spinach or swiss chard are nice too.

How Do You Make This Tortellini Soup Recipe?

Step 1. Brown the Sausage: Start by cooking the sausage until brown. Drain and set aside.

Step 2. Saute the Vegetables: Then sauté the garlic and onion. Add the carrots and celery and sauté until soft. 

Step 3. Add Other Ingredients: Add the remaining ingredients except the kale. Simmer until the tortellini is soft. Add the sausage and kale in and cook until the kale is wilted. 

Step 4. Stir in Cheese: Stir in Parmesan cheese if you like, add crushed red pepper and fresh parsley and enjoy!

Can You Freeze Cheese Tortellini Soup?

Yes you can but I suggest not adding the tortellini into the soup until you are ready to eat it. So if you plan to eat half of the soup now and want to freeze half for later only add the tortellini into the half you are eating now. 

Let the soup cool completely and store the half without the tortellini in the freeze in an airtight container. When you are ready to eat the soup defrost it overnight in the fridge. Cook the tortellini and add it into the soup, heat and enjoy!

Ingredients 

  • 3 tablespoons olive oil
  • 1 pound of ground Italian sausage,, mild or spicy
  • 3 large carrots,, diced
  • 1 small onion,, finely diced
  • 2 celery,, diced
  • 2 teaspoon Italian seasoning
  • 3 garlic cloves,, minced
  • 4 cups low sodium chicken broth
  • 1 -28 ounce can of diced tomatoes
  • 1 cup tomato sauce
  • 3 cups of tortellini {whatever you favorite variety is}
  • 1 1/2 cups kale,, chopped {you can also use spinach}
  • 1/4 cup parsley,, chopped
  • 1/4 cup Parmesan cheese,, shredded
  • Crushed red pepper for serving {optional}

Instructions 

  • In a large skillet heat 2 Tablespoons olive over medium heat. Add the Italian sausage and cook until browned. Drain the fat and set aside.
  • In the same skillet and heat 1 Tablespoon of olive oil. Add the garlic and saute for 2 minutes. Add the onion, carrot and celery and saute for 3 to 4 minutes.
  • Add the Italian seasoning, broth, diced tomatoes, tomato sauce and tortellini. Simmer until the tortellin is soft about 7-10 minutes, stirring occasionally.
  • Stir in the kale and pasrley and let the kale wilt.
  • Serve the soup with fresh Parmesan cheese and crushed red pepper {optional}.

Notes

  • A few additions that would be nice are beans and other vegetables like zucchini or mushrooms.
  • You can leave the kale out or add spinach instead.
  • If you don't like tortellini try using pasta instead.
