  • cabbage: small and medium cabbages work best with the measurements in the recipe, you may need to increase oil or garlic if using a large cabbage. The amount of cabbage steaks may also change depending on the size of your cabbage. I like to use green cabbage because it holds its shape well. Red cabbage can also be used but might soften more quickly and have a sweeter flavor.
  • olive oil: this recipe has only been tested with olive oil. Omitting oil has not been tested. Other neutral oils, such as vegetable or avocado oil, may also work. If you need to reduce oil, try using a spray oil instead of a bottle, and adjust as needed.
  • garlic: this is what gives the cabbage most of its flavor, adjust the amount for your own preference.
  • salt and pepper: add to taste, omit it need be. Also, feel free to have fun with the spices and adjust to your own preference. For example, for spicier cabbage steaks, add chili powder, cayenne, or paprika. For saltier or more garlicky flavor, use garlic salt. I also love a Mediterranean version using za’atar or sumac.
  • parsley: fresh parsley is great for a garnish. It brightens the dish.

Ways to Modify Roasted Cabbage Steaks

  • spices: you can sprinkle spices on the cabbage steaks. Some good ones are za’atar, sumac, cayenne red pepper, crushed red pepper or paprika.
  • cheese: add feta cheese or goat cheese to the roasted cabbage steaks. I also like adding Parmesan cheese the last 10 minutes of cooking for a cheesy crust.
  • herbs: fresh herbs are a great addition. Try fresh basil, oregano, dill or mint.
  • beans and lentils: top with chickpeas, white beans or even lentils.
  • balsamic: add a balsamic glaze for a touch of sweetness.
  • crunch: add pine nuts, sesame seeds, or even breadcrumbs for crunch.
  • tahini: tahini is a great addition to. Try adding a drizzle of this Tahini Sauce or Tahini Yogurt Dressing.
  • Mexican flavor: add shredded cheddar cheese, taco seasoning and salsa.

Step-by-Step Instructions

Mediterranean Cabbage Steaks

Step 1: Prepare Cabbage Steaks: Start by preheating your oven to 400℉ and lining your baking sheet with parchment paper. Remove the outer leaves of the cabbage. Then slice your cabbage into 1/2 – 1 inch slices, after cutting off or removing the core.

Step 2: Add Seasoning: Place the cabbage slices on your parchment lined baking dish and brush the olive oil over them. Sprinkle the minced garlic, salt, and pepper over the cabbage. If you want a spice added you can sprinkle that over the cabbage. I like crushed red pepper, za’atar or sumac.

Step 3: Bake: Then place in the oven and bake for about 40-45 minutes or until fork tender, flipping halfway through. The time will depend on the actual thickness of the slices.

Step 4: Serve: Remove from the oven and sprinkle on some freshly chopped parsley before serving and enjoying.

Air Fryer Instructions: To make air fryer cabbage steaks cook at 380 degrees for about 10-15 minutes, depending on the thickness. You might need to cook in batches. The air fryer does help create crispy edges!

Recipe Tips

  • When you slice cabbage into steaks, leave part of the core attached to each slice. The core acts like a glue to hold the leaves together. If you remove the core entirely, the layers can separate while roasting.
  • Be sure to completely cover all of each cabbage slice that isn’t in contact with the parchment paper, with a thin layer of oil.
  • Keep in the oven until tender, some outer layers may start to brown slightly, or become slightly dryer, this is fine, it is more important to make sure the cabbage is tender all the way through. Adjust time based on thickness of cabbage slices. Most slices tested were around 3/4 inch and were tender around 45 minutes.

    Storage Instructions

    Store the leftover crispy cabbage steaks in an airtight container, in the fridge, for 3-4 days. Reheat in the air fryer at 385℉ for a few minutes, or in the microwave in 30 second increments until thoroughly warm.

    Recipe FAQ

    I wasn’t able to cut all of the cabbage steak slices the same width, is this alright?

    This is fine, simply keep an eye on them and start checking for tenderness around 30 minutes or thinner slices.

    How will I know these are done baking?

    You will know these are done in the oven when you are able to easily stick a fork in the center of the cabbage slices and it goes all the way through without too much pressure. 

    Why are my cabbage steaks falling apart?

    If your cabbage steaks are falling apart, they may be sliced too thin. Cut thicker slices and keep part of the core intact to hold each steak together.
