MEDITERRANEAN SURIMI LETTUCE WRAPS
If you have hung around A Cedar Spoon for any length of time you probably have figured out I have a deep love for anything Mediterranean. My mom’s side of the family is Lebanese and I just adore anything that incorporates Mediterranean flavors into a meal. You will almost always find seafood, feta cheese, olives, parsley, hummus and fresh vegetables in my fridge.
Today’s Mediterranean Surimi Lettuce Wraps use some of my favorite Mediterranean ingredients along with Simply Surimi and wrap them up in a crisp piece of lettuce. If you are looking for a heart healthy, light but filling meal this one if for you. It also can be prepared in under 20 minutes. You can’t beat a no-fuss meal like that.
These lettuce wraps use hummus, feta, olives, cucumbers, tomatoes and parsley as the pairing for the surimi. It is a great combination when put together and is light and healthy. If you love Greek Salads this recipe is for you. The fun thing about lettuce wraps is that you can set out all of the ingredients and your family can prepare their lettuce wraps to their liking with the ingredients on the table. It can be an interactive meal for kids too!
