No Bake Coconut Cranberry Energy Bites are loaded with nutritious ingredients in a small bite size snack.  Peanut butter, oatmeal, coconut, dried cranberries, flax seed, chia seeds and honey give these a sweet, nutty flavor. These make a great toddler snack,  or you can pop these in your mouth post workout, when you are running errands, or freeze a batch for later.

In my house energy bites are all the rage. And with good reason.

We are on-the-go a lot and with a hungry toddler (and husband) I need to keep quick snacks that are nutritious on hand.  Energy bites have been my life saver. The first time I made these was back when I shared these Peanut Butter Coconut Oatmeal Bites with you guys. This was a few months after having Andrew and they were the perfect answer fora sleep deprived, busy family.

You can pop these in your mouth when you are out and about, as a post workout snack or if your toddler wants something a little sweet.

A couple weeks ago I shared another twist on energy bites with these Peanut Butter Oatmeal Prune Dark Chocolate Bites. Another winner in my house.

After I made that batch Will asked me to make more and I knew I needed to switch it up again. Today’s No Bake Coconut Cranberry Energy Bites are the marriage of two really great things: Loaded Oatmeal Cookies and Peanut Butter Coconut Oatmeal Bites.  Those Loaded Oatmeal Cookies are one of my favorite cookie recipes.  I especially love the dried cranberries and coconut together. I knew I had to bring that pairing into these energy bites.

Each bite has peanut butter, honey, coconut and oatmeal along with dried cranberries, flax seed and chia seeds.  These little snack bites are loaded with the good stuff so keep them handy for those extra busy times in your life.

Description

No Bake Coconut Cranberry Energy Bites are loaded with nutritious ingredients in a small bite size snack. Peanut butter, oatmeal, coconut, dried cranberries, flax seed, chia seeds and honey give these a sweet, nutty flavor. These make a great toddler snack, or you can pop these in your mouth post workout, when you are running errands, or freeze a batch for later.

Ingredients

  • 1 cup oats, old fashioned
  • 3/4 cup coconut {I used unsweetened, but feel free to use sweetened}
  • 1/2 cup creamy peanut butter
  • 3/4 cup dried cranberries
  • 1/3 cup honey {or more as needed}
  • 1 teaspoon vanilla extract
  • 1 Tablespoon chia seeds
  • 2 Tablespoons flax seed

Instructions

  1. Line a large cooking sheet with parchment paper.
  2. Put all ingredients in a large mixing bowl and mix well to combine. Put the dough in the refrigerator for 1 hour to help the ingredients stick together.
  3. Using a cookie scoop or your hands shape the bites and place on the parchment lined cookie sheet.
  4. Enjoy!
  5. {You can store these in an airtight container on the counter, in the refrigerator or the freezer.}

Notes

If you freeze these take one out of the freezer and let it sit out for 20 minutes before you are ready to eat it. [br][br]If at any point the bites don’t seem to be sticking together very well add more honey in order to get a stickier consistency.[br][br]The amount you make will depend on the size of the ball that you make.
