One Skillet Southwestern Quinoa has the flavors of the Southwest mixed with sautéed vegetables and quinoa to create a quick and easy meal that cooks in one skillet.
I am all about meals that only require one dish, pan or skillet to make. I don’t know about you but I hate doing dishes, even if it just means loading and unloading the dishwasher or washing a few pans. I am that person that loves to cook but dreads the clean up.
My husband makes fun of me because I clean up while cooking. Yup–that is my slightly obsessively clean side coming through. I just hate to create a delicious meal, sit down to eat and then have to finish it off by cleaning up a pile of dishes. I prefer to multi-task and clean up as I go. Needless to say when I made today’s recipe for One Skillet Southwestern Quinoa I was pretty excited to only dirty one skillet. It’s the little things in life, right? 🙂
I wasn’t sure if my husband would be thrilled about today’s dish because he isn’t always a huge fan of quinoa. He thinks it is bland (and I would agree) but that is why you have to really spice it up and add flavors to it. One Skillet Southwestern Quinoa mixes the flavors of the Southwest with quinoa, corn, red peppers, diced tomatoes, cumin, chili powder and vegetable broth to bring this dish to life.
If you like burrito bowls at Chipotle this is similar but with quinoa instead of that delicious cilantro-lime rice. You can really tailor this dish to your liking too. If you are a vegetarian you could try tofu or avocado to top this dish. If you like meat try chicken, beef or maybe pork. Garnish it up with cilantro, green onions, fresh jalapeños, cheese…get crazy with the garnishes!

Am making this right now! Don't know what Rotel is. I used a can of diced tomatoes and 1/4 cup of salsa verde (I didn't have any green chilies in my cupboard). Also, I am going to stir in a about 3 cups of diced spinach at the end. ... Just had a taste! Mmmmm!

Rotel is basically diced tomatoes with diced chilies mixed together in a can. It is a great idea to use salsa verde instead of green chilies. I bet that had great flavor! Spinach is also a great addition. Thanks for the ideas!

I also hate doing all the clean up after cooking, so this is my kind of meal! Not to mention that I love Mexican food and quinoa! I love making one pot dishes and taking them for lunch all week, so I think I will add this recipe to my rotation :)
