Peanut Butter Oatmeal No Bake Bites
For Thanksgiving we made out way to my parents house in Tennessee which meant a 7 hour drive with two toddlers. If you have children or have rode in a car with children, you know it can be difficult. My kids do fine for about the first two hours and then the questions start. Are we there yet? Can I eat something? How much longer?
I find that snacking is at an all time high when we are in the car. I get it. Car rides suck. They are really no fun at all. I hate them too. So I try to cut my kids some slack as much as possible. Over the course of my son Will’s four year life I have learned how to pack a car with distractions and snacks. I feel like I probably still have a lot to learn in this department but I am getting better. Peanut Butter Oatmeal No Bake Bites are one of my tricks for the car.
Since snacking seems to be what my kids want to do the whole car ride {I am pretty sure they are just bored} I try my hardest to have healthy snacking options. The night before a long car trip I cut up vegetables like peppers, carrots and celery, put together baggies of things like crackers, pretzels, vegetable chips, trail mix and put together a stash of cheese. We bring a cooler with us so I can store all of the perishable food.
Peanut Oatmeal No Bake Bites were in my sack of snacks this year. My love for no bake bites started with these Peanut Butter Coconut Oatmeal Bites and has evolved from there. The options are endless with the type of no bake bite that you create. Today’s version has chopped dates in them which I thought was a fun, healthy twist. My kids didn’t even know the dates were in there and they added a nice sweetness to the energy bite.
I remember my Grandma having dates around the house as a child {they are a Middle Eastern favorite}. I am not sure if you use dates in cooking, smoothies or appetizer but they are a beautiful thing. I add them into smoothie to add a natural sweetness which works great. I also love to make little appetizers with them and of course one of those is the oh-so-famous bacon wrapped dates. Dates have iron, potassium and are rich in minerals like calcium, manganese, copper, and magnesium.
These Peanut Butter Oatmeal No Bake Bites do the body good! And you can feel good about giving these to your kiddos on a long car ride…even if you have to give them two or three.
Peanut Butter Oatmeal No Bake Bites
Peanut Butter Oatmeal No Bake Bites are the perfect on-the-go snack or treat packed with healthy ingredients that will leave you satisfied and wanting seconds. You can also put these in the freezer for later!
Ingredients
- 2 cups oats, old fashioned
- 6-7 dates, pitted, chopped
- 3/4 cup all natural Peanut Butter
- 1/3 cup Honey (sometimes I need a bit more to help keep the snack bites held together)
- 1 teaspoon vanilla extract
- 1 teaspoon chia seeds {optional}
- 1 teaspoon flax seeds {optional}
Instructions
- In a large bowl, mix together the oats, dates, peanut butter, honey, vanilla, chia seeds and flax seed until combined.
- Chill in the refrigerator for an hour then roll out balls about an inch in diameter {use a cookie scoop or your hands}.
- Store in an airtight container in the refrigerator or on the counter. You can also freeze these.

Just made this for a camping trip. We haven’t even left the house yet and I’m trying to not eat ALL of them. Had one out of the freezer for a taste test and it was delish. I don’t have little kids, so this is perfect even for an adult snack. One small add I made was a pinch of kosher salt to temper the sweetness of the dates and honey since my peanut butter isn’t super salty.

Long car rides are a little easier for us now with electronic devices. I know that sounds terrible but the kids watch whatever they want or read or play games on their phones and tablets now that they are older. Plus we have gained an extra driver which is nice as well! Good snacks are key though! My kids will love these!
