If you have been following my blog recently you have heard me talk about Mariano’s, which is where I happily do my grocery shopping. When I say happily I mean exactly that. Mariano’s is my go to Chicago Bakery with so many fresh breads, along with their fresh seafood and large deli.
It is now my escape once a week for some “me” time. You might be thinking “her alone time is going to the grocery store?” Yes! Mariano’s for me isn’t just a grocery store, it is an experience. Plus I need a quick escape from my Mom duties once in a while. Don’t get me wrong I love my children but I also really enjoy cooking and food so it is my fun little escape. When I go to Mariano’s I don’t just feel like I am in a grocery store but a place I can explore new foods. Oh and have I mentioned their huge, beautiful produce department. This is where I spend a lot of my time when buying our weekly food.
Today I am excited to partner with #CollectiveBias and #MyMarianos to share one of my favorite meatless recipes Rainbow Thai Coleslaw with Sweet Cilantro-Lime Dressing. I recently had a baby which means I am now in the “drop that baby weight” mode. I have set goals that include working out, doing yoga, and of course eating extra healthy with a lot of protein and vegetables. Eating the “rainbow” is important when trying to eat a balanced, healthy diet.
Eating more meatless meals is also something I have started to incorporate into my weekly meal planning. We are starting meatless Monday in my house. I am excited to start creating more vegetarian recipes to share with you guys!
Mariano’s has such a large, bountiful produce section that it really helps me when creating recipes. They offer both organic options and non-organic options along with things like kale, bok choy, a large variety of squash, exotic fruits and the list goes on.
Rainbow Thai Coleslaw with Sweet Cilantro-Lime Dressing is a colorful salad of cabbage, carrots, peppers, cucumbers, fresh cilantro, edamame and peanuts topped with a sweet cilantro-lime dressing.
It is light and fresh and reminds me of something you would bring to a summer BBQ.
This also makes a great salad that you can put together on Sunday and use throughout the week for dinner or lunch (tip: add the dressing to the salad when you are ready to eat it). The edamame offers protein and you will get more than your daily dose of vegetables with this salad!
