SAUSAGE AND SHRIMP FOIL PACKETS
Grilling season has begun and I couldn’t be more excited. I love being able to quickly make a meal outside with very little clean-up.
Today’s Sausage and Shrimp Foil Packets are so easy to make, very customizable and the perfect warm summer grilling recipe.
You might remember when I mentioned that I am partnering with al fresco for their ambassador program. I am excited to be sharing easy recipes that you can make with their precooked sausages, breakfast sausage, meatballs and bacon.
Since they are precooked it makes them super easy to use in a variety of recipes from this Italian Sausage Pasta Bake to this Cajun Pasta with Chicken Sausage and Shrimp to this Sheet Pan Chicken Sausage and Vegetables.
Foil packet recipes are a great grilling option because there is minimal clean-up. Everything cooks inside the foil packet which is a great. I like to add the al fresco Sweet Apple Sausage, chopped potatoes, bell peppers, onion and garlic along with shrimp to my packets.
We also add a small amount of olive oil, butter and spices to add extra flavor.
The nice thing about the foil packets is that you can customize them to your liking. You can add whatever vegetables you have on hand, along with the chicken sausage and shrimp. If you don’t like shrimp you can leave that out and just do more vegetables.
WHAT ARE IN THE SHRIMP FOIL PACKETS?
SAUSAGE: al fresco has great options with their precooked chicken sausages. I especially love their Sweet Italian Sausage, Sweet Apple and the Roasted Garlic.
SHRIMP: I add frozen shrimp to my packets. You also could use fresh shrimp or just skip them all together if you want.
VEGETABLES: We love adding fresh vegetables to our packets. I like to add in bell peppers, onion and garlic. Feel free to add any vegetables you want but keep them the same size so they cook evenly.
POTATOES: Chopped potatoes are a great addition to foil packets. I like to use smaller potatoes but you can also use a Russet potatoes if that is what you have on hand. Sweet potatoes are also a nice option!
SPICES: When I make these packets I like to use Italian seasonings, cajun spices or a bbq rub blend. You can also add fresh herbs and spices to your packets if you want.
OIL AND BUTTER: I add olive oil and butter to each packet. The olive oil helps with the cooking process and butter adds extra delicious flavor!
HOW DO YOU MAKE SAUSAGE SHRIMP BOIL PACKETS?
Preheat a gas or charcoal grill over high heat.
Start by chopping up your ingredients into the same size pieces. This will help everything cook evenly. Place all of the ingredients including the shrimp in a large mixing bowl.
Add olive oil, a slice of butter, salt, pepper and seasoning.
Make the foil packets but cutting 4 – 12 inch long sheets of heavy-duty aluminum foil.
Divide the sausage, shrimp, vegetables and potatoes evenly into the four packets.
Fold up all 4 sides of each foil packet. Add olive oil, sliced butter, spices salt and pepper.
Use a spoon to toss the mixture in the packet until coated.
Fold the sides of the foil over the sausage, shrimp, veggies and potatoes, making sure to cover completely and seal the packets closed.
Place foil packets on the grill and cook until just cooked through, about 15-20 minutes, or until the vegetables and potatoes are just soft.
Serve each packet warm with fresh parsley and Parmesan cheese.

Ingredients
- 1 - 11 ounce package of al fresco Sweet Apple Sausage
- 1 1/2 pounds of large shrimp, peeled and deveined
- 1 1/2 pounds of baby Yukon gold potatoes, cut in half
- 1 red and 1 yellow bell pepper, seeded, sliced
- 4 Tablespoons of butter, sliced
- 4 Tablespoons olive oil
- 4 teaspoons of Italian seasoning or cajun seasoning
- Salt and pepper taste
- Fresh parsley
- Parmesan cheese
Instructions
