Thanksgiving is just around the corner and today I am sharing with you my Sausage Goat Cheese and Sun-dried Tomato Tuscan Stuffing. My Sausage Goat Cheese and Sun-dried Tomato Tuscan Stuffing is made with bread, Jones Dairy Farm All Natural Pork Sausage, sun-dried tomatoes, vegetables, herbs, chicken broth and goat cheese.  When I first started developing this recipe I wasn’t sure how sun-dried tomatoes, sausage and goat cheese would pair up in a stuffing, but they are perfect together.

When making stuffing there are some important things to keep in mind: 

1) Day old bread is best: whether you buy day old bread from the store or let the bread sit overnight with a towel over it, day old bread is best. You want it to be a bit hard so it doesn’t get too mushy and soggy with the ingredients added in.

2) Flavor test: test your stuffing if you are baking it in the oven so you can determine if it needs additional herbs or baking time.

3) Mushy test: you don’t want your stuffing to be overly mushy.  I like to be safe and air on the side of less chicken broth when I first start cooking the stuffing and then if I need to add a bit more further into the cooking process I will.
