I am writing today’s post after eating a whole lot of delicious hummus.  

I was invited to go to Richmond, Virginia last week to visit the Sabra Hummus factory and learn about all things hummus.

If you know me at all, you know this is my little slice of heaven.  

I have been making hummus for years and years and eating it for even longer, so learning how a company as great as Sabra does it, was a dream come true.  I met so many amazing people, ate a ton of great food and learned so much.

It is now is full swing around the Cleveland/Akron area. Our local farmers market is not open yet but there are a lot of bigger ones nearby that are up and running.

This past weekend we went to the Countryside Farmers Market down in the Cuyahoga National Park and it was amazing.  

It was by far the largest farmers market I have been to with everything from homemade bread, cage free eggs, lettuce, homemade popsicles, salsas, cheese, meat and more.

As you can see from our farmers market trip, summer is fast approaching.  

I hear a lot of people say that they don’t use their slow cooker in the summer and don’t get why you would.  I think a lot of people associate a slow cooker with fall and winter and comfort food like cozy soups and stews.  I was right there with those people until last summer.

I am convinced that summer and a slow cooker can be friends too.

For example, my Slow Cooker Salsa Verde Chicken Tacos recipe. Light, simple to make, versatile, and makes enough to freeze some for later.

As a Mom of two boys under the age of 3, life was crazy last summer.  

Between finding the energy to keep up with my kids and spending our days outside {Midwesterners understand the desire to be outside all of the time in the summer} I needed quick and easy dinner ideas during the week.  

Slow cooker to the rescue.  Yes, that little magical thing that does the work for you while you enjoy the pool, or lake, or a cold beverage in your backyard.

Slow Cooker Salsa Verde Chicken Tacos

When it is hot outside another benefit of your slow cooker is that it doesn’t heat up your house like your oven does.  

These easy chicken recipes made in the slow cooker during the summer are a good option because of the endless uses for them. 

Today’s recipe was for Slow Cooker Salsa Verde Chicken Tacos, but you can use this shredded chicken mixture for things like quesadillas, nachos, salads, as an enchilada filling or freeze half of it for later.

Recipes that make more than one meal are winners in my book.

Salsa verde is one of my favorite salsas.

I buy a big jar at the store and put it on everything or make a batch of homemade salsa verde with tomatillos I find at the store.  

I love the sweet flavor it has and sometimes a little smokiness depending on the brand.  

There is enough salsa in this recipe that it creates a tender, juicy chicken instead of a dry chicken which can sometimes happen with the slow cooker.

Storage Tips

Store the leftover salsa verde chicken in an air tight container for up to 4 days. To reheat you can heat in a skillet on the stove or microwave it.

Slow Cooker Salsa Verde Chicken Tacos

Summer is approaching, instead of heating up your house using your oven get out that slow cooker and make Slow Cooker Salsa Verde Chicken Tacos. Chicken breasts cook in salsa verde, green peppers and diced chilies to create a tender, flavorful taco filling. Salsa Verde Chicken also works great in quesadillas, over nachos or as an enchilada filling.

Ingredients 

  • 2 lbs. chicken breasts, boneless, skinless
  • 1 – 16 oz. jar of salsa verde {about 2 cups}
  • 1 green pepper, chopped
  • 1 – 4 oz. can of diced chilies
  • 1 jalapeño, seeds removed, chopped {optional for spice}
  • Tortillas or hard shell tacos for the tacos
  • Garnish ideas: fresh cilantro, cheese, tomatoes, extra salsa

Instructions 

  • Pour half of the jar of salsa on the bottom of the slow cooker {approximately 1 cup} and spread evenly. Place the chicken breasts on top of the salsa. Cover the chicken with the remaining ingredients, spreading the salsa, green peppers, jalapeños and green chilies over the chicken breasts to make sure they are covered.
  • Cook on low for 5-6 hours or high for 3-4 hours. With 30 minutes left remove the chicken breasts from the slow cooker and shred with two forks. Return the chicken to the slow cooker and stir to make sure the chicken gets covered with the juices again. Finish cooking.
  • Serve on tacos with fresh cilantro, extra salsa, cheese and tomatoes. You can also use this chicken for salads, sandwiches, burrito bowls, quesadillas and more.

Notes

I like my chicken to have those extra juices to use as a salsa to top my tacos but if you prefer it to be a bit drier I suggest adding 3/4 of the jar of salsa instead of the whole jar. [br]When I make this I freeze half in a ziplock bag laying flat. You can then use it later by defrosting it in the refrigerator overnight and then heating it up when ready to eat it. [br]You can use this chicken mixture in quesadillas, nachos, burrito bowls, as an enchilada filling, salads, sandwiches.

    I made the slow cooker salsa verde chicken tacos for our Christmas Eve lunch. Served them on hard shell tostadas with a little crumbled Mexican cheese on top. They were delicious, and super easy to put together.
