Thai recipes are among my favorite type of food. This Thai Cucumber Salad is similar to one from my favorite thai restaurant when I order chicken satay.

I knew I had to recreate it at home and share it with you guys.  The nice thing about this salad is that is it so easy to put together. This can come together in under 10 minutes.  

It makes a great side dish to your favorite Thai meal, the perfect summer side dish to bring to a get together or a healthy option for lunches.

One of my favorite vegetables is cucumbers. I love the crisp crunch that it cucumber adds to salads.  This salad would also be great as a topping to beef or shrimp tacos, an addition to a rice bowl or served alongside salmon.

Recipe Ingredients You’ll Need

  • Vegetables: The vegetables in this salad are english cucumbers, red onion and green onions. You can also use Persian cucumbers in this salad. I like to leave the skin on the cucumber but you can also peel them if you want.
  • Fresh Herbs: The fresh herbs that are in this salad are fresh cilantro and fresh mint.
  • Seeds & Nuts: Sesame seeds and chopped peanuts are added to the salad and add great crunch.
  • Chilies: Thai chilies add spice and heat to the salad. You can skip them or use jalapeños.
  • Dressing: The dressing is light and adds a lot of flavor. It mixes rice vinegar, garlic, lime juice, rice vinegar and honey.

How to Make this Thai Cucumber Salad Recipe

Step 1: Add Salad Ingredients into Bowl: Start by adding the cucumber slices, green onions, red onions, cilantro, mint, peanuts, sesame seeds and optional Thai chiles into a large bowl. Set aside.

Step 2: Mix Dressing: Then in a small bowl or mason jar, stir dressing ingredients all together until well mixed.

Step 3: Add Dressing to Salad: Pour the dressing over the salad and gently toss.

Garnish with extra cilantro and peanuts and serve at room temperature. Serve or refrigerate for up to 3 days.

Ways to Modify this Salad

  • Beans: Bean could be a nice addition to this salad and would add protein. Try chickpeas or white beans for a delicious addition. 
  • Vegetables: If you want to add more vegetables to this salad try snow peas, green beans, carrots, celery, radish or bell pepper. 
  • Fresh Herbs: I always think fresh herbs take salads to the next level. I used cilantro and mint in this salad. You could also adding parsley, dill or Thai basil. 
  • Spices: Spices can help add flavor to this salad. Some good spices would be red pepper flakes, oregano or ginger powder.
  • Greens: I like to add greens to salad. Some options would be arugula, spinach, kale or a mixed greens blend. 
  • Ginger: I love fresh ginger and it is a nice addition to this cucumber salad. You can use freshly grated ginger which I always think tastes better than ginger powder. 
  • Fish Sauce: Another nice option that you can add to the dressing is fish sauce. It won’t be a vegetarian salad so be aware of that if you want it to be vegetarian. 
  • Sesame Oil: If you like a nutty flavor in your Thai dishes try adding sesame oil in place of extra virgin olive oil.

Storage Tips

Store the salad in an airtight container for up to 4 days. You might want to add more dressing when you are ready to serve this salad.

Ingredients 

  • 2 english cucumbers, halved, thinly sliced
  • 2 tablespoons sliced green onions
  • 1 small red onion, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/3 cup peanuts, chopped
  • 2 teaspoons sesame seeds
  • 2 Thai chilies {sliced thin}, optional

FOR THE DRESSING

  • 2 garlic cloves, minced
  • 2 teaspoons honey
  • 2 tablespoons lime juice
  • 1/3 cup rice vinegar
  • 1/4 teaspoon salt

Instructions 

  • Add the cucumbers, green onions, red onions, cilantro, mint, peanuts, sesame seeds and optional Thai chiles into a large bowl. Set aside.
  • In a small bowl or mason jar, stir dressing ingredients all together until well mixed.
  • Pour the dressing over the salad and gently toss. Garnish with extra cilantro and peanuts.
  • Serve or refrigerate for up to 3 days.

Notes

  • You can add crushred red pepper for extra spice.
  • If you like fish sauce you can add 1 or 2 tsps. of that to the salad for extra flavor.
