This salad is such an easy salad that requires very little prep time.
There is something about the peppery arugula, the salty capers and the lemony dressing that just works so well together.

Recipe Ingredients You’ll Need
- Arugula: The star of the salad is the arugula. It is one of my favorite greens to use in salads or on pizzas. I love to buy it at farmers market if I can find it!
- Capers: I adore capers in salads. The saltiness of them works nicely with fresh vegetables and a light dressing. You probably know capers well from my Baked Cod with Lemon or this Chicken Piccata dish.
- Tomatoes: I grow vegetables in my garden in the summer and like to use them in salads as much as possible. They work great in today’s salad and you can use any tomatoes you want!
- Parmesan Cheese: I used a freshly grated parmesan cheese on this salad. You can also use feta or goat cheese if you would like.
- Lemon Dressing: The dressing is light and mixes together extra virgin olive oil, garlic, lemon juice, salt and pepper. It is simple but works so well in this salad.

Ways to Modify this Caper Salad
- Beans: If you want to add protein you can add chickpeas, white beans or black beans to this salad.
- Other Vegetables: This salad is a great canvas for other vegetables. Try red onion, scallions, bell pepper, carrots, celery or radish.
- Fresh Herbs: I love adding fresh herbs to this salad. Try fresh basil leaves, chives mint.
- Protein: There are a variety of types of protein to add to this salad. I like adding shrimp, hard boiled eggs, salmon or chicken.
- Dressing: I like the light lemony dressing but you can do a Creamy Dill Sauce or a Tahini Dressing.
How to Make this Arugula Salad with Capers
Step 1: Mix Salad Ingredients: Place the arugula, tomatoes and capers in a large mixing or salad bowl.
Step 2: Create Dressing: In a salad dressing container or mason jar combine the salad dressing ingredients and mix well.
Step 3: Add Dressing to the Salad: Pour the dressing over the salad and lightly toss.
Step 4: Add the Fresh Parmesan Cheese: Sprinkle the freshly grated parmesan cheese over the salad and enjoy!

Yes this arugula caper salad is naturally low in carbs and keto friendly as long as you follow the recipe provided.
This is a great meal-prep option but it only holds up for about 2 days before the arugula will start to wilt. If you know you are going to eat the salad throughout the week I suggest leaving the dressing off of the salad until you are ready to eat it.

Ingredients
- 4 cups argula, washed
- 2 medium tomatoes, diced
- 3-4 teaspoons capers, drained
- 1/4 cup freshly grated parmesan cheese
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
