Arugula Salad with Capers

Arugula Salad with Capers is a light, flavorful salad that makes the perfect side dish to any meal. Peppery arugula is paired with fresh tomatoes and salty capers topped with parmesan cheese and a light lemon dressing.

ARUGULA SALAD WITH CAPERS

I love arugula salads and I love capers.

If you have been wondering how to use capers in salad then this is the salad for you!

Today’s Arugula Salad with Capers is the perfect marriage of both of those. 

They are one of my favorite salads that I make on a regular basis.

You might remember this Lemon Arugula Salad with Pine Nuts I made in January.

I usually rotate between that salad and today’s salad with capers.

We have a local Italian style pizza restaurant that serves a similar arugula salad to the one I am sharing today.

I love ordering it alongside their thin, crispy pizza!

There is something about the peppery arugula, the salty capers and the lemony dressing that just works so well together.

WHAT INGREDIENTS ARE IN THIS ARUGULA SALAD?

ARUGULA: The star of the salad is the arugula. It is one of my favorite greens to use in salads or on pizzas. I love to buy it at farmers market if I can find it!

CAPERS: I adore capers in salads. The saltiness of them works nicely with fresh vegetables and a light dressing. You probably know capers well from my Baked Cod with Lemon or this Chicken Piccata dish

TOMATOES: I grow vegetables in my garden in the summer and like to use them in salads as much as possible. They work great in today’s salad and you can use any tomatoes you want! 

PARMESAN CHEESE: I used a freshly grated parmesan cheese on this salad.

You can also use feta or goat cheese if you would like. 

LEMON DRESSING: The dressing is light and mixes together extra virgin olive oil, garlic, lemon juice, salt and pepper. It is simple but works so well in this salad.

WHAT SHOULD I PAIR THIS SALAD WITH?

This salad works really well with so many different types of dishes. Here are a few of my favorites:

Arugula Salad with Capers

Arugula Salad with Capers is a light, flavorful salad that makes the perfect side dish to any meal. Peppery arugula is paired with fresh tomatoes and salty capers topped with parmesan cheese and a light lemon dressing. 

Ingredients

  • 4 cups argula, washed 
  • 2 medium tomatoes, diced 
  • 4 teaspoons capers, drained 
  • 1/4 cup freshly grated parmesan cheese 

FOR THE DRESSING

  • 2 Tablespoons extra virgin olive oil 
  • 2 Tablespoons lemon juice 
  • 2 garlic cloves, minced 
  • 1/4 teaspoon salt 
  • 1/8 teaspoon black pepper 

Instructions

  1. Place the arugula, tomatoes and capers in a large mixing or salad bowl.
  2. In a salad dressing container or mason jar combine the salad dressing ingredients and mix well.
  3. Pour the dressing over the salad and lightly toss.
  4. Sprinkle the freshly grated parmesan cheese over the salad and enjoy!
