I hope you all had a wonderful 4th of July holiday!

The weather in Cleveland was amazing and we spent a lot of time outside, grilling out and at Lake Erie relaxing.

Today’s Cucumber Salsa is the perfect summer salsa and is a recipe I use a lot when I need to whip up a quick appetizer to bring to a summer BBQ or a snack to have on hands on a hot summer day.

This salsa also works great on grilled fish or chicken or even as a salsa for these Easy Cod Fish Tacos or these Easy Fish Tacos with Spicy Pineapple Salsa.

As the name implies this salsa only uses 5 ingredients, making this a salsa you can whip up in under 10 minutes. You can’t beat that!

  • Watermelon: This recipe uses diced fresh watermelon. Make sure to buy a seedless watermelon.
  • Vegetables: I like to add english cucumber and red onion to this recipe. It adds a nice crispy texture to the salsa.
  • Herbs: Fresh cilantro is chopped and added to the salsa. You also can use fresh parsley.
  • Citrus: Fresh lime juice helps balance all of the flavors and adds a tangy sweetness.

How to Make Cucumber Salsa

Step 1: Combine Ingredients: Combine all of the ingredients in a medium mixing bowl. 

Step 2: Taste: Taste and adjust salt or add lime juice for sweetness. Serve with chips or on grilled fish or chicken.

Storage Tips

Store the leftover salsa in an airtight container for up to 4 days. You can add more lime juice when you serve the salsa.

Ingredients 

  • 3 cups watermelon, diced
  • 1 1/2 cup english cucumber, seeds removed, diced {about 1/2 of an english cucumber}
  • 1/4 red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste , optional
  • 1/2 lime, juiced, optional
  • 1 jalapeno, seeds removed, diced, optional

Instructions 

  • Combine all of the ingredients in a medium mixing bowl.
  • Taste and adjust salt or add lime juice for sweetness.
  • Serve with chips or on grilled fish or chicken.

Notes

  • You can mix this salsa up to your liking. Sometimes I enjoy adding bell pepper, white onion instead of red, diced tomatoes or even chopped mango or pineapple.
  • This makes 4 cups of salsa.

    This looks delicious and so refreshing! I plan to make it but I’m confused about the one-cup yield…given the amounts of all the ingredients; how many servings does it actually make?
