I hope you all had a wonderful 4th of July holiday!

The weather in Cleveland was amazing and we spent a lot of time outside, grilling out and at Lake Erie relaxing.

Today’s Cucumber Salsa is the perfect summer salsa and is a recipe I use a lot when I need to whip up a quick appetizer to bring to a summer BBQ or a snack to have on hands on a hot summer day.

This salsa also works great on grilled fish or chicken or even as a salsa for these Easy Cod Fish Tacos or these Easy Fish Tacos with Spicy Pineapple Salsa.

As the name implies this salsa only uses 5 ingredients, making this a salsa you can whip up in under 10 minutes. You can’t beat that!

In my house watermelon goes so fast! If I buy a large watermelon and cut half of it up it will be gone in no time.

My kids devour it! I like to use a portion of the watermelon to make this salsa to have to top our grilled chicken or fish.

I also like to have it to snack on when I get hungry during the week.

You can easily mix up the ingredients to use what you might have on hand.

Cucumber Salsa

Yield: 4 cups

Cucumber Salsa is a simple summer salsa using fresh watermelon, cucumber, red onion, cilantro and lime juice to create the perfect snack with chips or addition to grilled chicken or fish. Your guests will love this one!

Ingredients

  • 3 cups watermelon, diced
  • 1 1/2 cup english cucumber, seeds removed, diced {about 1/2 of an english cucumber}
  • 1/4 red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste {optional}

Optional ingredients:

  • 1/2 of a lime, juiced
  • 1 jalapeno, seeds removed, diced

Instructions

  1. Combine all of the ingredients in a medium mixing bowl. Taste and adjust salt or add lime juice for sweetness. Serve with chips or on grilled fish or chicken.

Notes

You can mix this salsa up to your liking. Sometimes I enjoy adding bell pepper, white onion instead of red, diced tomatoes or even chopped mango or pineapple.

This makes 4 cups of salsa.

This looks delicious and so refreshing! I plan to make it but I'm confused about the one-cup yield...given the amounts of all the ingredients; how many servings does it actually make?
