ASIAN PORK LETTUCE WRAPS

We love lettuce wraps in my house and eat them on a weekly basis. These Thai Turkey Brown Rice Lettuce Wraps have always been at the top of my list when it comes to wraps with these Asian Chicken Zoodle Lettuce Wraps coming in a close second.  But then I made today’s Asian Pork Lettuce Wraps and fell in love.

The ground pork uses in today’s recipe is a nice change from my typical ground turkey that I usually use. I recently made an Asian inspired burger using ground pork and loved the flavors. From there I decided I had to try ground pork in lettuce wraps. The Asian flavors in these are the best!

You can’t beat fresh ginger, lime juice, soy sauce, red chili pasta, red chili garlic sauce mixed with the meat and topped with fresh cilantro and green onion. I like to add in matchstick carrots and sometimes peanuts. I also really like adding the brown rice into my lettuce wraps to bulk them up and to add a grain to our plates, but you can leave that out if you want. I have also tried quinoa in wraps which works great.

Another thing I love about lettuce wraps is how easy they are to put together on a busy night. I can whip these up in under 30 minute which is always a bonus for me. As the school year comes to a close for us things have gotten pretty crazy so I am all about these easy dinners.

For those that are trying to watch what they eat lettuce wraps can be a nice option. The lettuce keeps the meal light and allows you to eat a little extra! It is almost like eating a salad but in wrap form. While these are one of my go-to dinners, they also wok nicely as an appetizer for guests. If you find a head of bibb lettuce with a lot of small leaves you can create little bite sized Asian Pork Lettuce Wraps for your guests.

I also highly suggest using the filling in other ways like quesadillas or tacos. My kids like when I use the leftover meat in quesadilla at lunch time, which is a quick and easy option!

Asian Pork Lettuce Wraps

Ingredients

For the pork lettuce wraps:

  • 1/2 cup cooked brown rice {or rice of your choice}
  • 2 Tablespoons olive oil
  • 1 cup sweet onion, chopped {about 1/2 of a medium onion}
  • 2 garlic cloves, minced
  • 1 pound ground pork
  • 1 lime, juiced
  • 3 Tablespoons low sodium soy sauce
  • 2 teaspoons red chili garlic sauce {I use Huy Fong, Chili Garlic Sauce}, more or less for spiciness
  • 1 teaspoon chili paste
  • 2 Tablespoons fresh ginger, peeled and grated
  • 1 cup fresh cilantro, chopped {plus extra for garnish}
  • 3 green onions, green part chopped
  • Salt and pepper to taste
  • 1 head of Bibb/Boston Lettuce, washed and separated

Garnishes:

  • Extra fresh cilantro
  • Unsalted peanuts
  • Matchstick carrots

Instructions

  1. Cook the rice according to the package.
  2. While the rice cooks heat the 2 Tablespoons olive oil in a large skillet and add the onion, sautéing for 2 minutes. Add the garlic and continue to sauté for 2 more minutes.
  3. Add the ground pork, fresh lime juice, soy sauce, chili garlic sauce, chili paste, ginger and continue cooking until the pork is browned.
  4. Mix the rice into the pork mixture along with the fresh cilantro and green onions and stir to combine. Add salt and pepper to taste.
  5. Serve the Asian pork mixture with crisp bibb lettuce and extra cilantro, matchstick carrots and unsalted peanuts for garnish.

Notes

Serving size is 1 3/4 cup of the pork mixture and 4 Bibb lettuce leaves. You would use a little less than 1/2 cup of the mixture in each piece of lettuce.

I actually think the leftovers for these Asian Pork Brown Rice Lettuce Wraps are just as good as the first day! The flavors really meld together a day or two later.

You can use whatever you favorite rice from white to basmati.

Such a coincidence. My wife made pork lettuce wraps today too. We added mint, cucumber in the wrap too. Made Vietnamese chili fish sauce to dip them it. Delicious.
