GREEK MARINATED CHICKEN WITH TZATZIKI SAUCE 

My heart is heavy today from the recent devastating events that occurred in Beirut, Lebanon.

While I do not live in Lebanon, my family is from there. My great-grandparents came from Lebanon many years ago and I have always felt a deep connection to it.

Lebanon has endured so much over the years and this just makes it all so much worse. 

It feels strange to share a recipe when my heart is heavy but I also feel like it is a way of honoring my ancestors and the people of Lebanon, by sharing with others around the world the delicious food that brings Lebanese around the table together.

The Lebanese are a resilient, loving people who live life to the fullest. Food has always been the center of our family get togethers and I think it has a way of brining comfort to us all.

Mediterranean Grilled Chicken with Dill Greek Yogurt Sauce on platter

As you know I love Mediterranean flavors. A lot of the recipes I share include ingredients that are commonly found in Mediterranean countries.

Today’s Greek Marinated Chicken with Tzatziki Sauce is a light, healthy meal that your family will love.

My favorite part about this meal is the tangy Dill Greek Yogurt Sauce that you put on top of your chicken.

It adds such a nice pairing to the chicken alongside an Easy Lebanese Salad

I also really like to pair this dish with these Spicy Lebanese Potatoes or these Lemon Cilantro Roasted Potatoes

WHAT INGREDIENTS ARE IN THIS GRILLED CHICKEN?

CHICKEN: I used chicken thighs because they are more tender and I really enjoy the darker meat. You can easily use chicken breasts, chicken tenders or whatever you like. 

MARINADE: The marinade for this Mediterranean chicken is flavorful and uses warm spices including paprika, cumin, thyme and oregano along with olive oil and lemon juice. I love this easy marinade!  

DILL GREEK YOGURT SAUCE: My favorite part about this recipe is the Dill Greek Yogurt Sauce. It adds a nice tangy flavor to the dish. I like to use plain Greek Yogurt but if you don’t want to use Greek Yogurt you can use plain yogurt.

WHAT SHOULD I PAIR WITH THESE MEDITERRANEAN GRILLED CHICKEN THIGHS?

There are also some great side dishes that pair well with this chicken. I often make these Mediterranean Roasted Vegetables, Ratatouille or this Turmeric Roasted Cauliflower

Salads pair really nicely with grilled chicken. I especially love this Summer Orzo Pasta Salad, Mediterranean Bean Salad, Lemon Arugula Salad or this Mediterranean Eggplant Salad

Greek Marinated Chicken with Tzatziki Sauce

These Greek Marinated Chicken with Tzatziki Sauc uses a simple Mediterranean marinade that creates a flavorful chicken that is grilled and topped with a tangy Greek Yogurt Dill Sauce. You will love this healthy, protein packed summer meal. Pair this with a fresh summer salad for a complete meal!

Ingredients

  • 2 - 1 pound packages of Gerber Chicken 

For the Marinade

  • 1/2 cup of extra virgin olive oil 
  • 1 lemon, juiced 
  • 4 garlic cloves, minced 
  • 1 teaspoon oregano 
  • 1/2 teaspoon thyme 
  • 1 teaspoon paprika 
  • 1 teaspoon cumin 
  • 1/4 teaspoon cayenne pepper {optional}
  • 1 teaspoon salt 
  • 1/8 teaspoon black pepper 

For the Dill Sauce

  • 1 cup of plain Greek yogurt 
  • 1/2 cup of lemon juice 
  • 2 Tablespoons olive oil 
  • 1 garlic clove, minced 
  • 2 teaspoon fresh dill, chopped

Instructions

    1. Trim fat from the chicken as necessary. In a large ziplock bag or a large container add the chicken.
    2. In a small mixing bowl combine the olive oil, lemon, garlic cloves, oregano, thyme, paprika, cumin, cayenne pepper, salt and pepper and mix well.
    3. Pour the marinade over the chicken and massage the marinade into the meat until the meat is coated with the marinade.
    4. Refrigerate for two hours in a sealed ziplock bag or a sealed container.
    5. After marinating, allow the chicken to sit, covered in the bag of marinade for 15-20 minutes while the grill preheats.
    6. Preheat the grill to medium-high heat. Brush grill grates with oil.
    7. Remove chicken from marinade; discard marinade.
    8. Place the chicken on the grill and cook for 5 minutes per side or until the chicken reaches an internal temperature of 165 F.
    9. Serve with a dollop of the dill Greek yogurt sauce and a summer salad.
