Buffalo Chicken Hummus Bites

Buffalo Chicken Hummus Bites are a healthy twist on your favorite buffalo chicken dip using hummus instead of cream cheese.  This creamy, spicy dip is baked inside of a mini fillo dough shell and then topped with more fresh blue cheese and celery.  These are the ultimate tailgating appetizer!

BUFFALO CHICKEN HUMMUS BITES

As we enter into tailgating season I am craving everything buffalo chicken.

Whether it is these Buffalo Chicken Hummus Bites to this delicious Buffalo Chicken Dip I want it on my table.

Everything I love about buffalo chicken in one little bite sized appetizer using one of my favorite ingredients, hummus. If you have had buffalo chicken dip before it probably had cream cheese in it and lots of it.  

Now don’t get me wrong, there is nothing wrong with cream cheese, but if I want to eat more than one of these little bites then lightening them up with hummus is the way to go!

The hummus in these Buffalo Chicken Hummus Bites creates the same creamy texture that cream cheese does without the guilt.  

I used Sabra’s Classic Hummus to keep the flavors neutral and then paired that with cooked, shredded chicken, hot sauce and blue cheese.

The nice thing about hummus is that you can sub it for so many things in recipes from the cream cheese, to the mayo, or create dressings out of it. It is a healthy alternative to lighten up so many dishes.

This delicious buffalo chicken mixture is then baked in a little mini fillo dough shells and topped with freshly chopped celery and crumbled blue cheese.

How simple is that? Just six ingredients, 20 minutes and these are on the table at your tailgate or football party.  If the Packers are playing you can be guaranteed that we are watching it and appetizers like this come in handy.

Mike and I love all things buffalo so I knew these would be a hit.

Now as far as the kids go it really depends on how they handle spice.

I let Drew try one and he wasn’t thrilled with the spice so you can always tame that down for the little ones.

Just make a batch without the hot sauce or cut it in half for less spice.

Buffalo Chicken Hummus Bites are a healthy twist on your favorite buffalo chicken dip using hummus instead of cream cheese. This creamy, spicy dip is baked inside of a mini fillo dough shell and then topped with more fresh blue cheese and celery. These are the ultimate tailgating and football watching appetizer!

Ingredients

  • 1 1/2 cups cooked, shredded chicken
  • 1/4 cup Sabra Classic Hummus
  • 1/3 cup crumbled blue cheese
  • 1/4 cup cayenne pepper hot sauce
  • 15 mini fillo dough shells

Garnish:

  • 2 celery stalks, leaves chopped and stalks chopped
  • 1/4 cup blue cheese

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl combine the shredded chicken, hummus, blue cheese crumbles and hot sauce and stir until everything is coated in the hot sauce.
  3. Place the mini fillo dough shells on a baking sheet. Using a spoon fill each fillo dough shell with the buffalo chicken mixture. Bake for 10 minutes or until the edges of the mini fillo dough shells are golden brown and the blue cheese is melted.
  4. Garnish with additional blue cheese and celery. Serve warm.

Notes

I bought the mini fillo dough shells from my local specialty store {maybe like a Whole Foods} but I think most stores should carry them in the freezer section.

You can add more or less of the hot sauce depending on the crowd and how much spice people can handle.

I like to buy a rotisserie chicken for this recipe and shred that for quick and easy shredded chicken. You can then use the leftover chicken for other recipes like chicken salad or chicken quesadillas.

When chopping the celery save the leaves for garnish--they make the plate look pretty! 🙂

You can make these ahead of time and pop them in the oven when you are ready to serve.
