And by fence I mean you love Valentine’s Day and always have something romantic planned or you feel that is just another one of those Hallmark holidays?
I am more a middle of the road person when it comes to Valentine’s Day. Before we had children we always went to dinner to celebrate Valentine’s Day but I think it was more of an excuse to go to a nice dinner. We had a tradition each year to go to our favorite Italian restaurant down the street. It was delicious and very quaint and romantic. But I don’t think you need one day a year to be romantic and give each other gifts and say all of that mushy stuff. 😉
Since we will have a new baby in our house for Valentine’s Day this year we will be having a romantic dinner at home. And by dinner I mean one of those freezer meals I prepared during my pregnancy!
But lets be honest, since Valentine’s Day is more about the sweets for me, this Chocolate Avocado Pudding is something I can whip up in 10 minutes and serve for dessert! If you are looking for something chocolatey and rich but with a little added “healthy” this pudding is for you! It may sound strange to put the avocado in chocolate pudding but you can’t even taste it. It actually makes the texture even creamier and silkier than normal.

Chocolate Avocado Pudding
- Prep Time: 5 minutes
- Cook Time: 9 minutes
- Total Time: 14 minutes

A sweet, decadent chocolate pudding with hidden avocado to help children and your family eat healthy fats while enjoying a delicious treat.
- 1/4 cup butter, softened
- 1 cup avocado puree (1 avocado mashed)
- 1 cup confectioners’ sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon pure vanilla extract
- 1/4 cup cornstarch
- In a medium pan over low heat melt the margarine over low heat.
- Stir in the avocado puree, sugar, cocoa powder and vanilla.
- Cook and continue mashing with a spatula to smooth out any lumps from the avocado for 3 to 4 minutes, until the mixture thickens.
- Remove from the heat and gradually stir in the cornstarch.
- Serve warm. Garnish with fruit like raspberries a little dash of confectioners’ sugar.
For the avocado puree take 1 avocado and mash it until most of the lumps are gone.

I have never heard that avocado can be added into the recipe of desserts. Of course, I can understand that its oily consistency can be very beneficial but I still doubt as for the taste. Is it really that good in combination with chocolate?

I really liked it. I didn't even taste the avocado. It is a little oily but mixed with chocolate it didn't even bother me. I personally really liked it, especially because of the added health benefits.
