Coconut Cranberry Chia Seed Granola is simple to make with oats, coconut, dried cranberries, chia seeds, almonds and coconut oil.  This makes a great breakfast with yogurt and fresh fruit or a snack while you are on the go.

I have been meaning to share more homemade granola recipes for some time now but I have been distracted by side dishes and dinner recipes. Time to diversify as we head into spring!

Coconut Cranberry Chia Seed Granola is in my pantry as we speak because I can’t stop making it. I also am loving these Cranberry Almond Energy Bites which is similar to this granola but in a small bite sized snack for on-the-go or your freezer. 

Granola goes fast in my house whether it is for breakfast with milk or over yogurt with fresh fruit or as a quick snack on the go.  I like making my own at home because I can mix up the ingredients and try new things.  

I also like that I can control the sugar that is in it.  

Store-bought granola can be great but a lot of the time when I read the labels it is packed full of sugar. In this recipe there is sugar from the shredded coconut and dried cranberries but you could use unsweetened to cut down even more on the sugar.

Other than being able to control ingredients I love how easy it is to make granola.  

Measure the ingredients + mix + bake it in the oven and enjoy!

Granola is one of Will’s favorite things to help me make. It is a nice recipe for the kids because there is a lot of measuring and pouring, which are easy things for a 3 1/2 year old to help with.  

He also loves tasting each ingredient as it goes in, including the chia seeds! 😉

Like most homemade granola recipes you can customize this recipe to your liking.

If you are allergic to nuts or just want to avoid them you can leave them out and maybe substitute more dried fruit.

Coconut Cranberry Granola

Coconut Cranberry Chia Seed Granola is simple to make with oats, coconut, dried cranberries, chia seeds, almonds and coconut oil.

Ingredients 

  • 3 Tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 3 cups old fashioned oats
  • 1/2 cup sweetened coconut, shredded
  • 1/2 cup almonds, or nut of your choice
  • 1/2 cup dried cranberries
  • 1/4 cup chia seeds

Instructions 

  • Preheat the oven to 300 degrees.
  • In a medium mixing bowl combine brown sugar, cinnamon, salt, coconut oil, vanilla and honey and whisk together. Set aside.
  • In a large mixing bowl put the oats, coconut, almonds, dried cranberries and chia seeds and mix together. Pour the coconut oil mixture over the oats and mix until the oats are coated completely.
  • On a parchment lined baking sheet spread the granola mixture in an even, thin layer.
  • Bake the granola for 30 minutes, stirring the mixture every 10-12 minutes until done.
  • Remove the granola from the oven and let sit until cooled. Serve over yogurt with fresh fruit. Store the remaining granola in airtight containers in your pantry or on your counter for up to two weeks. I use mason jars to store mine {ours never lasts that long with the granola lovers in my house!}.

Notes

  • You can use whatever nut you feel like using–walnuts and pecans have worked good for me.
  • You can substitute raisins for the dried cranberries if you want.
