Lemon Garlic Roasted Brussels Sprouts

Lemon Garlic Roasted Brussels Sprouts are crispy and packed full of flavor from the garlic and lemon juice.  This delicious side dish is even better with a little freshly grated parmesan cheese.

Lemon Garlic Roasted Brussels Sprouts are a game changer. Probably not for the every day person that likes brussels sprouts, but for Will they are.

We had a break through two weeks ago at dinner.  If you have a picky eater at home you know the feeling when your picky child decides out of the blue to try something new.  

Will was a great eater as a baby. If you put it on his plate he would eat it. As Will became an opinionated toddler he decided he didn’t want to eat anything mixed together.

That means if you put macaroni and cheese in front of Will he won’t eat it. Weird, right? A three year old that won’t eat mac & cheese? 🙂

Pizza? Not a chance. A casserole? Nope! Anyways, one thing that makes me happy is that he eats almost all fruits and vegetables.  But there are two vegetables Will wouldn’t eat, one being spinach {which he secretly gets in smoothies} and brussels sprouts.

Two weeks ago those little Lemon Garlic Brussels Sprouts with a sprinkle of parmesan cheese were starring at Will from his plate just waiting to be eaten.  

And they won! Will said in an excited voice “I am going to try my brussels sprouts.”

Mike and I quickly looked at each other in shock and quietly continued eating.  To our amazement Will proceeded to eat his brussels sprouts and asked for seconds. In the house of a picky three year old I call that an accomplishment.

Moral of the story is that if you are persistent and patient with your picky eaters you might get these small break throughs here and there.

And then maybe as time goes on you will have bigger break throughs and then one day your child might just eat everything you put on their plate. 😉

Am I dreaming? Probably. But hey, my kid just ate brussels sprouts!

So over the past few years I have tried making Brussels sprouts different ways.  I of course love roasting them like in today’s recipe or this Brussels Sprouts with Cranberries.

Lemon Garlic Roasted Brussels Sprouts

Yield: 4-6
Prep Time: 5 minutes
Cook Time: 40 minutes
Total Time: 45 minutes

Lemon Garlic Roasted Brussels Sprouts are crispy and packed full of flavor from the garlic and lemon juice. This delicious side dish is serve warm with freshly grated parmesan cheese.

Ingredients

  • 1 lb brussels sprouts, ends trimmed and yellow leaves removed, chopped in half
  • 3 Tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 Tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon salt
  • Dash of pepper
  • 1/4 cup freshly grated parmesan cheese

Instructions

  1. Preheat oven to 400 degrees F.
  2. Cut off the brown ends of the brussels sprouts and pull off any yellow outer leaves. Mix the brussels sprouts in a large bowl with the olive oil, garlic, lemon juice, salt and pepper.
  3. Pour them on a baking sheet and roast for 35 to 40 minutes, until crisp on the outside, stirring occasionally while roasting.
  4. Remove from oven, sprinkle with a bit more salt and the parmesan and serve warm.

Notes

If you like your parmesan melted on the brussels sprouts roast them for 3-5 more minutes or until the cheese melted.

I'm always looking for new side dishes, and I love Brussels Sprouts! I usually just sauté mine with garlic, olive oil, and freshly ground pepper, but I know I'm going to love the lemon and parmesan!

I didn't like brussels sprouts until I was an adult--that's awesome that your son likes them! They are so sweet and delicious when you roast them. I'm pretty sure I only tried them canned or boiled to mush when I was younger. I've never tried adding lemon though--I'm excited to try it out!

I was the same way as you when I was a child. I didn't like them until I was an adult. These are a great starter for the kids because they are roasted, crunchy and the sweet lemon helps.
