Good Morning guys!
This past month has been a whirlwind for us! We are just returning today from a week visiting my parents in Johnson City, TN, spent Easter in Cleveland, Ohio and a week visiting Mike’s parents in Florida. Since I was still on maternity leave we figured we would take advantage of the time off and visit family.
It was so nice to be in Florida after the crazy long winter we had! The ocean is my favorite place to be so I was in heaven! 😉
The weather was amazing–80 and sunny, so we spent a lot of time at the beach and pool!
Mike and I escaped for a quick date night…a must for all of you parents out there, right?!
And enjoyed a few sunsets..
Today I am flying home alone with my two and a half year old and three month old! I am a little bit scared and hoping for the best. Fingers crossed that there are no melt downs and we arrive home in one piece! 🙂
All of this travel and post baby recovery has been exhausting! Today’s recipe for a Green Energy Smoothie is something I made over the past few months to help boost my energy and get a good dose of healthy vitamins in. It has a lot of healthy ingredients: pineapple, bananas, coconut water, parsley, avocado, spinach and lime juice.
Did you know that coconut water contains easily digested carbohydrates in the form of sugar and electrolytes? Some athletes drink coconut water to help replenish their electrolytes after a hard workout. It is a clear liquid (not coconut milk, that is different) and has a sweet, nutty taste.
This Green Energy Smoothie would be perfect for a post-workout smoothie and since I am jumping back on the post-baby work out bandwagon tomorrow I will be drinking this from time to time.

Description
An energy boosting green smoothie to give you that extra kick of energy in the morning or after a work out.
Ingredients
- 1/2 cup coconut water, chilled (can sub 1 % milk, almond milk or organic soy milk)
- 1 frozen banana, chopped
- 1 avocado, peeled pitted and chopped
- 1/2 cup baby spinach
- 1/2 cup frozen pineapple chunks
- 1/4 cup fresh parsley, chopped
- 2 Tablespoon fresh lime juice
Instructions
- Place all ingredients in a blender and blend until smooth.

April 28, 2014 at 1:27 pmThose are some darn cute babies! I actually made myself a green juice this morning and I felt a little “buzzy” from the extra nutrients. I also really like using “strong” ingredients like parsley and cilantro. But then I usually have to chug it pretty fast to get it down.
Your smoothie version sounds much more enjoyable than my concoctions 🙂
