INSTANT POT FRIED RICE
Today’s Instant Pot Fried Rice is such an easy recipe and makes a healthy side dish to so many of your meals.
One of my favorite things about this recipe is that it is a great base for adding in so many other ingredients.
Sometimes I will scramble a couple of eggs and stir that in, cook up some Lemon Marinaded Chicken, Grilled Ribeye Steak or Air Fryer Coconut Shrimp to serve with it or top it with chopped peanuts and green onions.
My kids really like this fried rice too and often ask for seconds!
When I make this I use brown rice but you can always swap it out for white rice.
You can also use frozen stir-fry vegetables but any frozen vegetables will do.
Recipe Ingredients
- Broth: The broth or water helps cook the rice in the instant pot. I use broth for that added flavor but water is fine too.
- Rice: My recipe for fried rice uses brown rice but white rice also works. I like brown rice for a healthier side dish option.
- Vegetables: Frozen vegetables work great in this recipe. I buy a stir-fry mixture from the grocery or any frozen vegetables.
- Soy Sauce: Soy sauce helps add flavor to the fried rice. I try to use low sodium soy sauce but either will work nicely.
- Sesame Oil: Sesame oil isn’t necessary but I like the flavor that it adds to this fried rice dish.
- Garnishes: Garnishes are a nice way to take your fried rice to the next level. You can add things like sliced green onions, sesame seeds, chopped peanuts or a cooked, scrambled egg.
How Do You Make Instant Pot Fried Rice?
1. Add Rice & Water: Add the rice and water to the Instant Pot. Attach the lid and ensure the vent is in the “sealing” position. Heat the Instant Pot using the Manual Pressure-Normal-High Pressure function and set the timer for 5 minutes.
The Instant Pot will take about 10 minutes to come to pressure and will then begin counting down from 5.
2. Release steam: Once the Instant Pot has finished cooking, release the pressure manually by switching the valve to the “venting” position. Be careful— the valve will steam and may splatter.
Turn the Instant Pot to the Sauté function.
3. Add Remaining Ingredients: Add the frozen vegetables, soy sauce, olive oil, and sesame oil. Saute the rice and vegetables, stirring occasionally for 5-8 minutes, or until the rice has started to crisp in some areas and the vegetables are hot.
Serve with chopped peanuts and sliced green onions, if desired.
How Do I Store Fried Rice?
With fried rice the way to keep it fresh longest is by refrigerating the leftovers right away.
I like to spread it in a baking dish or a large tupperware container and putting it in the fridge. It will stay in the fridge for up to 4 days.
Can I Freeze Fried Rice?
One thing I love about fried rice is you can freeze half for later.
I let it cool completely in the fridge then I put it in a large freezer safe ziplock bag or a Tupperware container. You can also store the fried rice in smaller baggies for individual portions.
When I am ready to eat the fried rice I will remove the container out of the freezer and add the fried rice to a skillet with a little olive oil and slowly reheat until warmed through.

Ingredients
- 2 cups uncooked brown rice {or white}
- 2 cups water or broth
- 2 cups frozen stir-fry vegetables
- 1 Tablespoon olive oil
- 1/4 cup low-sodium soy sauce
- 1 Tablespoon sesame oil
- Chopped peanuts and sliced green onions, optional-- for garnish
Instructions

Notes
- Fresh vegetables would also work in this recipe— I’d recommend a mix of carrots, broccoli, and peas. If you want to use fresh onion, saute it for a few minutes before adding it to the rice so it isn’t overpowering.
- If you don’t have sesame oil, it can be left out of this recipe. It adds a nice nuttiness but it isn’t necessary for great fried rice!
- If you like egg in your fried rice, remove the cooked rice and veggies from the Instant Pot, crack an egg (or two) and cook them through fully. Break the eggs up and then return the rice and veggies to the Instant Pot and stir to combine.
- This recipe is intended as a blank slate— feel free to be creative! Water chestnuts, edamame, or unsweetened peanut butter would all be delicious additions.
