Lemon Baked Salmon with Pine Nuts and Mint Yogurt Sauce brings together my favorite Mediterranean flavors to create a flavorful, nutritious dinner that is ready in under 30 minutes. The lemon baked salmon is topped with toasted pine nuts and a minty yogurt sauce.
Today I am excited to be sharing an important initiative with you all, The Sustainable Seafood Project.
I was lucky to meet Jessie from Life As A Strawberry at BlogHer Food last year in Miami. She is such a fun, genuinely passionate girl that not only shares mouthwatering recipes on her site, like this Butternut Squash Soup with Goat Cheese and Bacon, but she also is also an advocate for sustainable seafood and started The Sustainable Seafood Project. This initiative brings together food bloggers to help shed light on the importance of sustainable seafood. Sustainable seafood is something that is also near and dear to my heart so when I talked with Jessie at the conference about her initiative I knew I had to join and spread the word.
I know the basics about sustainable seafood but when I went to The Sustainable Seafood Project’s website I did some digging and learned a lot more. I love seafood and I know many of you do too. The scary thing is that once our fish are gone, they are gone! Around the world fish are hunted in great numbers and many species are seeing their numbers decline. The Sustainable Seafood Project tells the story of the Bluefin Tuna, which is all but extinct to help put it in perspective. Stop by and read the story here.
If you feel overwhelmed when buying seafood and don’t know how to choose what to buy or purchase at a restaurant stop by this page dedicated to shopping and dining resources for sustainable seafood to help you make your choices.
In our house we try to eat seafood at least once a week, not only for the health benefits, but because it is easy to make and a nice clean slate to use bold, exciting flavors. Today’s Lemon Baked Salmon with Pine Nuts and Mint Yogurt Sauce mixes some of my favorite Mediterranean flavors into one simple meal. The salmon is brushed with an olive oil, garlic and lemon mixture and then baked in the oven. The salmon is then topped with toasted pine nuts, freshly chopped parsley and a minty yogurt sauce.
Check out these other food bloggers that are also sharing delicious sustainable seafood recipes and advocating on behalf of The Sustainable Seafood Project.
Serve this salmon with these Simple Garlic Parmesan Green Beans and Avocado, Kale and Spinach Salad from Sarcastic Cooking.

Beautiful recipe again Julia. My 4 y.o son, who is hard to keep at the table, declared multiple times that he loved this salmon- winner!

I live in salmon country and this is a delightful recipe. It enhances the salmon and lets it's flavor be the King of the recipe. The toasted pine nuts is an inspired touch..
Don't normally talks about me----but please make note of the slight name Change from Wild Goose Tea. New design--whoopee and some new features.
