I try to make a vegetable side dish with every lunch and dinner I put on the table. These can vary from cooked vegetables to cut up peppers, carrots and other raw vegetables. I grew up always having a vegetable with every meal and this is very important for me when I am feeding my family. I must admit that sometimes I get bored with the same old steamed vegetables and I know my toddler does too.
To encourage my kids to eat more vegetables and enjoy them I try to mix things up each week. Simple Garlic Parmesan Green Beans is one of my son Will’s favorite ways to eat green beans. After he eats them he tells me that he loves garlic and asks for seconds and thirds. It is really cute and makes me happy that he is willing to eat his vegetables in new ways.
We have gone through a tough time with Will when it comes to eating new foods. He is one of those super picky toddlers that you hear about. One area that Will is adventurous in when it comes to food is fruits and vegetables. This is always my starting point when it comes to introducing new flavors, spices and ways of cooking a food.
Simple Garlic Parmesan Green Beans are fresh, steamed green beans that are quickly sautéed in butter, garlic and onion and then topped with parmesan cheese. In this recipe I use three big cloves of garlic because I like the garlic flavor to really stand out but if you have someone in your family that isn’t a huge fan of garlic you would use one or two cloves instead.
Not only is this is a great side dish for your family dinners but it also makes an impressive and easy dish to serve guests at a holiday dinner or party {just make sure you have some mints ready to freshen their breath}. 😉
Simple Garlic Parmesan Green Beans
Mix up the weekly side dish routine with these Simple Garlic Parmesan Green Beans. This 10 minute side dish is a great addition to your weekly dinners or a holiday meal. {An adult and kid favorite in my house.}
Ingredients
- 1 lb. fresh green beans, washed and ends trimmed
- 2 Tablespoons unsalted butter
- 3 garlic cloves, minced
- 1/4 cup sweet onion, finely chopped
- 2 Tablespoon parmesan cheese
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil with a steamer insert. Once the water boils steam the green beans until they are almost tender and a bright green color {I usually test one to see if it is the texture I like}.
- While the green beans are cooking heat the butter in a large skillet over medium heat. Add the garlic, onion and a dash of salt and pepper and sauté until soft.
- When the green beans are done cooking drain them. Add the green beans to the large skillet with the garlic and onions and sauté the green beans in the mixture making sure all of the green beans get coated with the garlic and onions over medium heat. Add salt and pepper to taste.
- Remove from the heat and sprinkle the parmesan cheese over the green beans.
- Serve warm.

I make something similar using Asparagus so I must try the green beans version as it looks so good and am pretty sure delicious, too! :)
