Recipe Ingredients You’ll Need:
- Mushrooms: You can use any mushrooms you have on hand. I prefer button mushrooms or a medium sized mushroom if you can find them.
- Garlic: Fresh garlic is my go-to for this recipe as it adds a ton of flavor and really helps infuse the mushrooms.
- Butter: I suggest using unsalted butter if you can because it helps control the salt. If you are avoiding butter just sub in more olive oil.
- Olive Oil: Try to use a really good extra virgin olive oil if you can. You also could use avocado oil.
- Spices: The spices in this recipe are dried thyme and oregano. If you can get ahold of fresh herbs that is even better.
- Balsamic Vinegar: The balsamic vinegar balances the flavors and is a nice savory addition.
- Soy Sauce: The soy sauce adds a bit of saltiness to the sauce on the mushrooms.
- Brown Sugar: The brown sugar helps balance the flavor sin these mushrooms. If you want to avoid sugar you can use honey or maple syrup or leave this out.
- Fresh Herbs: The fresh herbs take the mushrooms to the next level. I like parsley, oregano, fresh chives or thyme.
How do you Make Balsamic Roasted Mushrooms
Preheat the oven to 400°F.
Step 1: Prepare the Mushrooms: Wash and clean the mushrooms of all of the dirt and dry with a paper towel.
Put the mushrooms in a large mixing bowl. Add the garlic and shallots to the mushrooms and mix well.
Step 2: Mix Together Sauce: In a medium mixing bowl add the butter, olive oil, thyme, oregano, balsamic vinegar, soy sauce, brown sugar, salt and pepper and mix well. Add the sauce into the mushrooms and toss well.
Step 3: Spread on Baking Sheet: Spread the mushrooms on a non-stick baking sheet or sheet pan evenly.
Step 4: Roast Mushrooms: Roast in the oven for 15 minutes, stirring halfway through until the mushrooms are tender.
Remove from the oven, drizzle a small amount of balsamic vinegar to finish off the mushrooms {optional} and sprinkle the fresh thyme and parsley on the mushrooms. Serve warm.
Store the leftovers in an airtight container.
Ways to Modify these Mushrooms:
- Spices: You can modify these mushrooms with spices to change their flavor. Try using Italian seasoning, crushed red pepper, paprika, cayenne red pepper or cumin.
- Cheese: Adding parmesan cheese to these mushrooms would be a nice finishing touch.
- Fresh Herbs: Fresh herbs are always a nice addition to roasted mushrooms. I like fresh basil, parsley, oregano, thyme or dill.
- Sauce: This recipe uses a soy balsamic sauce but you could use a variety of other sauce options. Try using olive oil and red wine vinegar, or add a little mustard to the sauce. Another option is to add worcestershire sauce.
- Heat: If you like spice you could add chopped or diced jalapeños or chili peppers. You can also add a touch of hot sauce.
- Other Vegetables: You could add vegetables in with the mushrooms when you roast them. Some veggies I like are diced bell peppers, carrots, broccoli or cauliflower.

Yes you should! Rinse them quickly under running water and dry them thoroughly with a paper towel. Too much excess moisture when you clean mushrooms will make them steam instead roast.
I like to use cremini mushrooms, white button mushrooms, baby bellas, portobello oyster mushrooms or shiitake, and oyster mushrooms. If you are using larger mushrooms like portobellos they should be sliced for even cooking when making mushrooms recipe.

- 2 pounds mushrooms, washed and cleaned
- 5 garlic cloves, minced
- 1 shallot, minced
- 2 tablespoons butter, melted
- 2 tablespoons extra virgin olive oil
- 1 teaspoon thyme
- 1 teaspoon oregano
- 2 tablespoons balsamic vinegar
- 1 tablespoon soy sauce
- 1 teaspoon brown sugar
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
