In my house we love sheet pan meals and I know many of you do too!

You can’t beat a meal that bakes on one sheet, is healthy and packed with protein. 

The easy clean-up is probably my favorite part of sheet pan meals. 

Today I am excited to be partnering with Dole to share their new Sheet Pan Meal Starter Kits. There are three delicious meal kit options: Lemon Parmesan, Homestyle Roasted Herb and French Onion. 

Today’s recipe uses the Lemon Parmesan Meal Kit loaded with fresh, washed and cut ready-to-eat broccoli florets, whole mini-cut carrots and whole mini red potatoes along with lemon pepper parmesan cheese seasoning.

I paired the Lemon Parmesan Meal Kit with chicken tenderloins and it was the perfect weeknight meal. The nice thing with these meal kits is you can pair your favorite protein with them whether it is chicken, salmon or shrimp.

Recipe Ingredients You’ll Need

  • Dole Lemon Parmesan Sheet Pan Meal Starter Kit – This kit includes whole baby carrots, mini red potatoes, broccoli florets and garlic parmesan and lemon pepper parmesan cheese seasoning.
  • Chicken Tenderloins: I used chicken tenderloins in this recipe because my kids love them and they cook nicely in a sheet pan meal. You could also use chicken thighs, chicken breasts or diced chicken. 
  • Olive Oil
  • Fresh Parsley

How do you Make this Sheet Pan Chicken

Step 1: Cut the Potatoes: Dice the potatoes into quarters. Add the vegetables and the potatoes in a large mixing bowl.

Step 2: Mix Veggies, Seasoning and Olive Oil: In a large mixing bowl add the vegetables, 1/2 of the seasoning packet and 3 tablespoons olive oil. Toss to coat evenly.

Step 3: Place on Baking Sheet: Place the vegetables on the baking sheet in a single layer. Leave room to add the chicken.

Step 4: Coat Chicken with Seasoning: Add the chicken tenderloins to the mixing bowl. Add 1 tablespoon olive oil and remaining 1/2 of the seasoning packet to the bowl. Toss to coat evenly on the chicken.

Step 5: Place Chicken on Baking Sheet: Place the chicken on the pan between the vegetables and potatoes {the chicken should not overlap the vegetables or potatoes}.

Step 6: Bake: Turn oven to 425 degrees F. Bake your sheet pan meal on the bottom rack for 30-35 minutes or until the chicken reaches 170 degrees F.

Ways to Modify these Tenders

  • Protein: I really like chicken in this sheet pan meal but I also really like using tofu, chickpeas or seafood like salmon. 
  • Vegetables: I love that these meal kits come with a variety of vegetables already in the package. If you want to add additional vegetables I suggest bell peppers, tomatoes or green beans. 
  • Spices: The seasoning packet is a perfect mixture just the way it is. If you want to spice things up a bit you could also add paprika, cayenne red pepper or some crushed red pepper. 
  • Cheese: I think that finishing this sheet pan meal off with a sprinkling of Parmesan cheese would be a nice addition. 
  • Herbs: I like adding fresh parsley but I also think fresh basil, dill or oregano would be nice to garnish.

Store Tips

Store the sheet pan meal in an airtight container for up to 4 days. To reheat you can microwave the meal or you can quickly reheat in the oven at 250 degrees.

Ingredients 

  • 1 – 21 ounce Lemon Parmesan Dole Sheet Pan Meal Kit
  • 1 pound of chicken tenderloins
  • 3 tablespoons olive oil
  • Fresh parsley for garnish

Instructions 

  • Preheat the oven to 450 degrees F.
  • Line a large baking sheet or cookie sheet with foil or parchment paper. Spray the baking sheet with non-stick cooking spray {alternatively you can just spray the non-stick spray on the baking sheet}.
  • Cut the potatoes into quarters and set aside.
  • In a large mixing bowl add the vegetables, 1/2 of the seasoning packet and 3 tablespoons olive oil. Toss to coat evenly.
  • Place the vegetbales on the baking sheet in a single layer. Leave room to add the chicken.
  • Add the chicken tenderloins to the mixing bowl. Add 1 tablespoon olive oil and remaining 1/2 of the seasoning packet to the bowl. Toss to coat evenly on the chicken.
  • Place the chicken on the pan between the vegetables and potatoes {the chicken should not overlap the vegetables or potatoes}.
  • Turn oven to 425 degrees F.
  • Bake your sheet pan meal on the bottom rack for 25-30 minutes or until the chicken reaches 170 degrees F. You want to make sure and check the sheet pan meal towards the end of cooking because depending on your oven and the cut of chicken it could take less time than the 25-30 minutes.
  • Garnish with fresh parsley and enjoy!
