Who doesn’t love a great slow cooker chili recipe? This healthy, protein-packed Slow Cooker Turkey Kale Chili will warm your family up in the colder months and makes the perfect game day meal.
SLOW COOKER TURKEY KALE CHILI
I love my slow cooker and I love a good, hearty chili recipes. With a newborn on the way I know I will be using my crockpot a lot throughout the fall and winter.
Today we are tackling both of those with this Slow Cooker Turkey Kale Chili. Some of you might be thinking, kale in chili…no way! But I promise you that the kale is subtle and blends right into the chili. You can feel good feeding your family a big bowl of this chili that is healthy and packed with protein. My kids didn’t even notice the kale in the chili!
Slow Cooker Turkey Kale Chili is also great for game day. Throw a batch of this in your crockpot and have a warm pot of hearty chili on the table in time for the game. I like to lay out a nice spread of garnishes, so everyone can load up their chili with their favorite toppings like fresh cilantro, sour cream or Greek yogurt, tortilla chips, cheese and diced red onion. I love having a variety of chili recipes in my back pocket to use throughout fall. Not only is chili super easy to throw together, it is also great for leftovers. I always have a few containers left to throw into my freezer for later!

Slow Cooker Turkey Kale Chili
Who doesn't love a great slow cooker chili recipe? This healthy, protein-packed Slow Cooker Turkey Kale Chili will warm your family up in the colder months and makes the perfect game day meal.
Ingredients
- 1 lb. lean ground turkey
- 1 small sweet onion, diced
- 1 bell pepper, seeded, diced
- 4 cloves garlic, minced
- 1 jalapeño, seeds removed, chopped {optional for spice}
- 1 1/2 Tablespoons chili powder
- 1 1/2 Tablespoons cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper {optional for spice}
- 2 teaspoons dried oregano
- 2 Tablespoons tomato paste
- 2 - 14.5 oz. cans diced tomatoes, drained
- 1 - 15 oz. can low-sodium black beans, drained, rinsed
- 1 - 15 oz. can no salt added corn, drained
- 1 cup low-sodium chicken broth
- 4 cups Earthbound Farm® organic mixed baby kale
Garnish:
- 2% plain Greek yogurt
- Unsalted tortilla chips, crushed
- Cilantro
- Diced red onion
- Cheese
Instructions
- Brown the turkey in a skillet and then add the turkey along with the onion, pepper, garlic, jalapeño, chili powder, cumin, paprika, cayenne pepper, oregano, tomato paste, tomatoes, black beans, corn, broth to slow cooker, and cook on low for 5 hours.
- At 4 1/2 hours add the kale to the slow cooker, stir and continue to cook for 30 more minutes.
- Garnish with Greek yogurt, chips, cilantro, red onion and cheese.
Notes
Feel free to use whatever meat you want or even try this as a vegetarian chili. You can substitute whatever greens you want--spinach would work well.
You can also use a different bean, like kidney beans or white beans.
You can freeze the leftovers in an airtight container.

Can you brown the turkey 1st for more flavor? Would I need to reduce the cook time?

After looking back over the recipe I actually would cook the turkey first before adding it to the slow cooker. I have done it both ways but I like cooking my ground turkey first. I am going to adjust the recipe. The cook time is the same.
