Today is a very special day! We are throwing a virtual bridal shower for Stephie from Stephie Cooks. Surprise Stephie!
She is getting hitched in April. If you aren’t following Stephie’s blog you need to head over there now. She shares all kinds of mouthwatering recipes, especially her baked goods and sweets. I am absolutely not a baker and doing things like baking a loaf of bread intimidates me. Stephie on the other hand is a pro.
Stephie’s wedding theme is “rustic elegance” with things like BBQ for dinner and pies for dessert. I love the idea! I decided to add to her rustic festivities I would make Strawberry Mint Mascarpone Crostini with Lemon Honey Drizzle.
Elegant yet rustic, I think. I ate half the tray so I can definitely say they are tasty.
Stephie and I were both Chicago food bloggers and I was lucky enough to meet her a few times. The most recent time was at BlogHer Food Conference in Miami last year. We hung out at some of the sessions, parties and explored Miami a little. Stephie is such a sweet and fun person to be around. Since I recently moved to Cleveland I need to figure out the next time our paths can cross.

Strawberry Mint Mascarpone Crostini with Lemon Honey Drizzle
Ingredients
- 1 french baguette, cut into 1/4 inch thick slices {about 25-30 pieces}
- 3 Tablespoons extra virgin olive oil, {more or less depending on how much you spread on the bread}
- 8 oz. mascarpone cheese
- 6 large strawberries, thinly sliced {about 1 1/2 cups sliced strawberries}
- 1/3 cup mint leaves, loosely packed, chopped
- 2 Tablespoons honey , {you could need more or less depending on how much honey you want on top}
- 1/2 lemon, zested
Instructions
- Preheat oven to 350 degrees.
- Arrange the baguette slices in one layer on two baking sheets. Put the olive oil in a small bowl and use a pastry brush to spread the olive oil over each slice of baguette.
- Bake the baguette slices in the oven for 20 minutes, or until just golden brown {you want them crispy but not too crispy or brown}.
- Remove the baguette from the oven and let cool for 15 minutes.
- Once cool spread the mascarpone in a thin layer on each baguette slice. Place two strawberry slices on each baguette.
- Garnish with the freshly chopped mint, a drizzle of honey and the lemon zest.
